you went crazy on this one. so much flavor from the onions, tomatoes, and spices cooked in the same oil the chicken was fried in, and then the achar adds a whole new dimension. that has to be one of the best sauces ever.

Great recipe chef. For people who do not like to use ready made mixed Pickle/Achar. You can buy "Achar spice" which is essentially all the spices which go in the pickle without the fruit/vegetable. Main ingredients of any Achar spice is Mustard, Fenugreek, Fennel and Onion seeds (cumin and coriander seeds are optional) , so you can also make your own blend (coarsely ground) and add to the dish, which will give you similar taste.

I buy the pre-made mixed pickle from my local Asian store. I would recommend that you chop the pickle a bit and make sure there are no hard bits in it, as there is often hard inedible mango seed shell in there!

Mate, this looks awesome. I've been cooking one of your recipes every Sunday since October. I've yet to have bad feedback, everyone loves them. I'm on Keto for January, would love to see your take on Saag Paneer - as I'm practicing making side dishes whilst not eating rice/breads etc!
@margaretmurphy22653 жыл бұрын
Hi. I was very interested in your comment about Keto. I am diabetic and stay away from rice and bread due to sugar content. I would be interested if you found any low carb recipes. Sorry if I’m being cheeky but I miss Indian food so much.
@itsTronBonne3 жыл бұрын
@@margaretmurphy2265 Hah, well you caught me on a Sunday so I'm currently prepping a meal for tonight! In general the curry side of Indian dishes are high in protein and fat (oil, ghee) but low carb. Onions and tomato are the biggest offenders and they are relatively low. The hardest thing is substituting rice, naan, roti etc. Personally I cook a "fry" of some kind - brinjal, cauliflower, courgette. I also like to make a paneer based dish that uses yoghurt or cream. There's also the option to make cauliflower rice and such, but personally I'm not a fan.

Chef could you perhaps make a video where you explain some of the basics and different terminology that you use? For example: What is bhuna How to freestyle different curries from a tomato/onion gravy How to make recipes traditionally at home instead of using base gravy (which I know you have to do in the industry to get the food out quick) Explaining some techniques and must knows from the Bangladeshi/Indian kitchen

Another great recipe, thanks mate. I've made a few of your recipes with great results. My kids are still eating a Korma from a jar, they don't like too much spice even though they like the onion bhaji and chicken pakora I have made from your recipes. Please can you show us how to make a BIR style Korma as I have told them it has so much flavour compared to the jar shit they eat. I can't just get one from a takeaway as we moved from London to a little Island in Ireland a few years ago and no takeaways are available, hence why I have been following your fantastic recipes. Thanks again and all the best.
