It's nice to see someone stressing the importance of removing ALL the silver skin from venison before cooking! I always say that people who think deer meat tastes gamey just haven't had it processed properly. I'm thankful hubby (and now our oldest son) know how to properly process the deer they harvest so it always tastes great without me having to go through a million extra steps when I'm cooking it trying to get the gamey taste out.

THANK YOU, MATT. There is no feeling or sigh of relief as when the freezer is full and 'the store' is in for the coming Winter. If we can harvest from the hunt, it's doubly satisfying. I'll be doing the methods here to get the venison tender, moist and less gamey. Also, THANKS TO THOSE GONE FROM US for passing down and paying forward the many HOW-TO'S our families still enjoy.

I would eat that with you! We have almost the same Dutch Oven, ours has spikey drip points on the underside of the lid. It's super old and passed down. We figured out it's over 150 years old.

I ain't gonna lie, taking the silverskin off is nice but if you got enough time, prep and patience you can cook that shit down to non-existence. The most important thing (which he didn't mention here) is removing the glands. Not just the tarsal but there's another one inside the sirloin cut.

Looks delicious! We have trouble eating much deer around here. They are graze on winter wheat and that doesn’t give them a good flavor. If you kill a deer that’s eaten a lot of corn and grass, it tastes better to us. Thanks Matt for the lesson. Looks like a good idea to give it a try!

Matt makes that look so easy and the cooking is the easiest part, but you should see him when he's cleaning the deer meat. When I say cleaning, I mean when he is preparing the meat for the freezer. He is miraculous in cleaning the meat and removing all connective tissue and the film that covers the muscles and that is why his end product is so good!

Hi, this year I finally learned to love deer meat by trying new recipes from the deer my husband harvested and I butchered. I also learned silver skin can break down through long braising and makes the meat feel less lean. I've slow braised stew cuts and shanks by making venison bourguignon in the dutch oven with beef broth and merlot wine. Braising is a wonderful method and made the meat taste like beef.

I do something very similar, including the Old Bay. Suggestion: try adding some apricot preserves on top in place of the honey (or whatever tart fruit you have...I know you all grow and can a lot of your own stuff). I'd love to see more wild game recipes of yours. I've been looking for more and more old world/old American game recipes and have started exploring some of the recipes from Germany, Austria, Hungary etc. Any of the mountainous countries with hunting traditions have similar deer recipes. I probably turn half of my deer into goulasch. So good. Just add onions and paprika to what you did here, then remove the meat and reduce the liquid, and you've pretty much got yourself some goulasch. You might also enjoy watching Scott Rea on youtube. He's a traditional style butcher in northern England -- much of the same cuisine as Appalachian cooking. He has a few cookbooks out now. He's all about eating and enjoying the whole game animal -- everything from deer to opossoms to crows to pheasants and rabbits.

I would get up at four am put the stuffed turkey in the oven, low heat, go back to bed and wake up with the amazing smell of roasting turkey. Sure be nice to have a venison roast. No one I know hunts here in CT! Like the way Matt makes this. Raising the arm high to distribute the spices evenly.

That reminds me of what I do for Christmas. I do a stuffed Deer stuffed onion or the grill. I use Nutmeg and cinnamon. good deer and some ground beef for fat. That looks fantastic!

While you were talking, and when I could see your eyes, I immediately thought that Corie surely does have those same eyes. Both twins are a really good mix of the both of you. I have twin nieces, Cathie and Carrie. Yesterday they were 51!! I can’t believe it. Corie and Katie remind me of them so much when they start goofing around. Such precious girls. I love pepper too! I find it interesting that you use Old Bay. Going up in Appalachia with a family full of hunters, there was always deer meat being used in many ways! But now living in the south for 35+ years, I never heard of Old Bay until I moved here. Sounds DELICIOUS!!!

I'm Always looking for different deer roast recipes and this one has oregano which I will try on it next time. The bacon really adds the perfect flavor, fat and salt content for me too. Bring on the black pepper 😋! Do y'all cook rice or creamed potatoes with it? 🙂

Last week a friend gifted us a huge portion of venison. It's been 50 years since I cooked any and then I just floured and fried it. It was stored over ice in an ice chest for a week to tenderize and remove gaminess. I stuck large 3-4 pound chunks of meat into gallon freezer bags to store until I had time to cook them. I opened my laptop to search out some recipes just now and at the top of the YT videos was this one. Talk about great timing. Your recipe looks wonderful, the resulting meat looked delicious, and it will be the first recipe I try. Thanks so much!

Are there really any recipes in Appalachia? My mom and her 6 sister's would write them on index card's but never used them. Think they were used as guides for the sister's who didn't possess the "magic" that was southern comfort food or just off the tops of their head's. I caught on, early on but can't quite replicate it all and I miss it dearly now that I'm older and they are gone. Venison is still my favorite right along side Virginia ham. My late husband's doctor and his wife (also a doctor) and their 5 kids eat mostly deer. His mother and I were teachers together for about 10 years. He hunted on our farm.

The honey has granulated. If you heat it up just a bit and stir, the granulation dissolves and it is perfectly edible.

Low and slow, That's the way to go. I tend to favor deer meat on account of it not having a bunch of fat off in it. Don't get why folks soak deer meat with apples to get the wild flavor gone, never seen no difference with that step no ways. Don't know why some folks don't like deer meat. If you ever told my sister-in-law it was deer meat, she wouldn't eat it, don't say a word about it and she'd tear it up, which was just plumb silly on account of her eating it all her life. So many ways to cook up some deer meat, it's hard to choose when the time comes to fix it up.

I cook mine about the same way. I leave the hind quarter whole and season real good, I like a lot of garlic on mine, then wrap in the cheapest bacon I can find, and cook on 250° till it falls apart.

I do believe I've learned a new way to cook it. I just pierce it with garlic, wrap it in Bacon, rest it on onion, potatoes, and carrots. I do believe sometime, i will give this way a try. I do love old bay.

I think I would pierce the roast with a knife most of the way through to get the flavors deep into the meat, but I'm sure this venison preparation tastes really really really good - I might try this with some goat or if I get an oryx hunt in southern NM.

FYI: Beer has water in it but also a natural tenderizing property. I just add a beer or two to the pot then fat and seasonings

My son in law shot a 10 point buck yesterday. He is tickled to death with it. He had been trying to get it for 18 days. He said there is another, better one in the same area. He is going back in the morning and Missy said she is going with him. My niece got a doe too last night. She isn't as happy with her deer or her car.
