Today, we're going to make the juiciest deer burgers we've, or you've ever had. We're going to make them with Wagyu Beef fat trimmings! The final ratio on our burger is 80/20. Just mix 2.5lb of our Wagyu fat trimmings with 25lb of your favorite protein and grind. You can use venison like deer or elk, regular beef, or whatever you'd like! After the grind, just ball them up and go smash them on your favorite griddle!

Smashing is the only way to do deer burgers. I don't mix any fat with my ground venison anymore. 100% all deer smashed on a hot griddle makes it as juicy as you'd ever ask for. Ofcourse, if you can afford to pay $40 for a chunk of wagyu fat...why not?! lol. They look fantastic guys. Loved the video, as usual.

OMG........ Those looked so good. The dripping juices, and YES, the sauteed onions............ WOW. Only thing I disagreed with was the statement about restaurant quality............. NOPE..... Those burgers was made with love and passion. Not restaurant style.

Wow. that wagyu fat will bring some butteriness to the deer. Yum. I’m sure everyone will add their tricks to smash burgers, so here are mine. Use a hot burger press instead of the paper and spatula. And if you do use paper, use parchment. It won’t stick to the meat like wax paper will. I use a dime and a squirt of water to melt my cheese. Also, prefer sautéed onions for the sweeter taste. I rely on the iceberg lettuce for the crunch factor.

Pretty nice but I think the purpose of a deer burger is you want it to taste like deer and not a cow, just my opinion 🤷🏽‍♀️

Isn't 2.5lbs of wagyu fat out of a total of 15lbs only 16.7%? Is there like some secret butcher math going on here? Sorry I couldn't help myself... I'm an accountant, but also a bearded butchers fanboy and loyal customer. As always keep up the good work fellas. Can't wait to harvest my first deer of the season to make some of that venison bacon you guys cooked up a couple videos ago. Guess I'll have to make some smash burgers now too.

Yes special butcher math indeed. They take 20% of 12.5 lbs which is 2.5 lbs. They are taking the total pounds of deer and then finding 20% and then adding that much wagyu fat into the meat

@@coreyhamby2989 it was a light-hearted jab, I love these guys like family I've been watching them so long....that being said, they said 2.5lbs of fat to 12.5lbs of venison gives you 20% fat to 80% venison and that math is simply not right. Happy hunting fellas and keep up the good work!!

I loved every moment of this, but the math guy in me has to comment. 12.5 lbs of meat and 2.5 lbs of fat is a 5:1 ratio, which is 83/17. 4:1 (10 lbs meat, 2.5 lbs fat) would be 80/20.

Would be amazing to try it with the wagyu fat we get three deer per person with our tags on Kodiak Island Alaska those sound amazing and I love the sauteed onions and then when you mix them with the crispy ones at the end that's even better

Man, Amazing! 1 Question tho: How intense is the wild flavour (haut gout). We dont have access to deer in my area 24/7, so i have to call the hunter for it. BTW: You have to mandatorily saute the onions!

Oh yea, also.... everybody knows the level of onion-doneness depends on the individual’s preference and individual burger recipe itself. But according to Smellivision I’d agree with Scott; raw onion would be a match to the richness of the game meat. 🖖🏼🖖🏼 Count it.

Ive seen you guys make deer burger with pork fat....I did a 90%-10% and I grinded it only twice and when I made a burger paddy and put it on the cast iron pan just to get a taste it seemed wet and really fine. I don't know what went on and its possible its the grinding process. Hoping maybe you guys could shine a little light or recommendations thanks!....FORGOT to mention I'm using a Kitchenaid mixer with the meat grinder attachment.

I shot a doe first week of the season here in Michigan. I bought some waygu tallow that I ground into all my burger. I did a 10:1 ratio and it was still juicy. It’ll be the only thing I’ll mix in with my venison burger now.

They’re no doubt the juiciest venison burgers ever but I’ve gotta ask yinz to go all out now... “These are deer”, indeed. They’re also 20% beef. Some of the BEST BEEF! My guys!! 🤩🤪😋✌🏼🥳 No complaints here boys, but perhaps a challenge. Strictly outta curiosity. Is it possible to make a juicy venison burger mince using venison fat??
