Hi am late, best turkey I've ever had was 11 years ago. And trust me, I know it's exactly 11 years ago cause it freaking showed up on my facebook feed today. And the turkey was baked low heat with a can of beer up its ass for 6 hours. I don't know how, but the meat was so tender. Regarding air fryer, yes you can cook food faster because it can reach higher temp quicker than conventional oven. But sometimes slow cooking make food tastier than flash cooking.

I'd cook on dehydrate at 95 degrees c for hours for ultra tender then fi ish off 180 for last 20 mins

Looks delicious!! I have a turkey breast and was debating how to cook it because it will only be my husband and myself for Thanksgiving. I really don't want to dirty a lot of dishes and pans for such a small dinner. I have a 10 qt. air fryer and my turkey breast would fit in it really well. The difference is simply the design. They both use a heating element and a fan to circulate air and vacuum pressure to the food. An air fryer design tends to cook a bit more equally however.
