For parboil:
1 kilo pork hocks
1/4 cup ginger sliced (divided)
3-4 pieces dried bay leaves
water for boiling
salt and pepper
4 cloves garlic, finely chopped
1 onion, chopped
2 medium tomatoes, sliced
3 green chilies
1 stalk lemongrass
2 stalks green / spring onions
1 teaspoon chicken powder (optional)
1/2 teaspoon annatto powder
1 tablespoon black beans/tausi
1 small can tomato sauce or tablespoons tomato paste
1 small can pork and beans
1 tablespoon peanut butter
salt & pepper to taste
cooking oil
