You can also sprout the beans prior to cooking. You can sprout beans in an insta pot using the yogurt function. There are videos for this. Spouted beans have more enzymes and and thus easier to digest and better for you. It's really easy an they taste great.

I just got my Instant Pot yesterday. Preparing dried beans was top of my list for using the pot. I soaked Great Northern beans overnight and made them in the Instant Pot today for 8 minutes. They are perfect for my soup. This is a game changer for me. I love dried beans; no more canned for me. I seasoned them and they smell and taste great. Thank you so much!

I just bought an Instant Pot - mostly because of being inspired by you, Nisha, and your delicious recipes. I'm most excited to make beans, as canned beans (like black and pinto) are kind of expensive in Hong Kong. Now I can just buy bulk dry beans at an Indian grocery and make beans whenever I want. This video was much needed!! I buy my beans uncooked in a bulk food store now in efforts to avoid having anything to throw out or recycle (since most things don’t end up being recycled) but I was stressing about the prep it took and the cooking. Just made a batch of Peruano beans. Extremely creamy beans. Cook on meat setting for five minutes, vent, throw out the water, rinse, then put the beans back in with all the fixings, I love garlic, onions, a good bunch of parsley, a few hot peppers. I used a vegan Chorizo, a little turmeric and covered it all with water, one inch over the beans. Cooked it all for 13 more minutes, let it rest for five more minutes then vented it. Smelled so good I could not wait to eat. The hubby came quickly downstairs and pulled up his seat at the table. We both ate with smiles on our faces. Perfect buttery, creamy beans. Yum.

The addition of carom seeds (ajwain) or epazote (from Mexico) really helps with the digestibility of beans.

Hi! I just thought I'd add something I read/heard years ago. It said never use salt while cooking dried beans as this can cause them to cook unevenly-or leaves them uncooked-no matter how long you cook them. I've had great success with frequently cooking dried beans in an instant pot without using salt. I always wondered why people add salt while cooking different pastas, also. I guess, I try to cook as healthy as possible... eliminating as much salt and fats while cooking, e.g., I sauté in water and/or broth instead of oil (small amounts, just keep adding more, if needed). And, for years, I never questioned any of the above because I thought we had to use oil while cooking, that is, until I became a vegan/purist and healed myself of many chronic symptoms and diseases.

Adding Lemon Juice to the beans helps break down the oligosaccharides, reducing the negative effect of beans (sort of like beano....only to the beans and not to the gut) I've been doing this for decades...it works ♥

Farts its part of life, but bloating because of food isn't. Soak your beans for 1/2 with lemon or lime slices. You won't be bloating at all. Our colon will appreciate it.

Asafoetida is also a anti flatulence. Asafoetida is used in savory dishes, often to add a more full flavor by mimicking the taste of onions, garlic, egg, and even meat. My personal tips from cooking beans very often: add 1/4-1/2 tsp of baking soda (sodium bicarbonate) to the soaking and cooking water, as well as salt. The baking soda softens the skins. When cooking beans with an acidic ingredient (e.g. tomatoes), the cooking time needs to be roughly doubled, because acid slows down the cooking. Some people say beans will never be fully cooked if cooked in tomatoes, I disagree, they do, it just takes longer.

Add two table spoon of apple cider vinegar when you soaking ,at least 12 or more hours . So can get the all nutrients from it . Many people think beans is full of nutrients but don’t know how to use them . Thanks

I list out the steps in a very detailed which help ensure the yogurt culture forms right and safely. But you can also put the yogurt ingredients in glass jars and put those inside the instant pot.

Thank you Crystal! Many of the recipes use simple, easy to find ingredients (grains, legumes, everyday veggies)! There are some international inspired recipes that have some more complex ingredients (i.e., curry paste), but they are rarely a star ingredient that is essential. Hope that helps :)

Is it necessary to rinse and sort the beans first. You may have mentioned that but I possibly missed it? Also is boiling water required for soaking?

Hi there, it could be helpful to rinse and sort your beans, though it’s not absolutely essential. I just soak the beans in cold water for eight hours or overnight. In the blog post I do include a way to quick soak your beans if you are in a rush.

Um, I don't own an IP yet, but I think they're stainless? If so, wash manually with some really good soap-Dawn or undiluted Dr. Bronner's-and throw some baking soda on your sponge with the soap. Takes care of the smell and the stain. 🤗 Edit: f-ing autocorrect.

I want to make chili with my instant pot. 1. So I let the beans soak overnight, drain the water and rinse so I will not clear the entire building out with human gas. 2. I cook the beans in the instant pot on high for 25 mins and let the release go down on its own. Then I drawn the water and add all the chili stuff and cook for another 25 mins or press chilli on the instant pot and let release on its own. Is that about right?

But some of the recipes include "pot-in-pot cooking" (baking a cake or casserole in a pan inside the instant pot), but those pans would be too big for the 3 quart Instant Pot. Hope that helps!

Yes, I add salt to the soak water. I also add black pepper and bay leaves sometimes, but salt is the real essential one :)

Good video. But I STILL don't know how long to cook great northerns that have been soaked. I've looked at 30 videos trying to find out. I have 1.5 cups of soaked beans. I do not know the weight!

The directions on the bean and lentils packet sais not to add salt in the beginning because it may not soften... is it an issue for you?

I soak for min 25 hrs . Sometimes 48 . I change water in between too .Lectins in beans are terrible .

i know this is a 3 year old video but maybe youll still see this. adding salt to the beans before cooking them may seem better cause it seems like they sre going to absorb that flavor which is true but they also change the texture of the beans. ive never had issues with bland or over salted beans by salting after cooking i think you just need to start slow and taste before you add more when adding salt before they are cooking you cant actually taste to see if its enough or too much. so by adding salt afterwards improves the texture and flavor in my own opinion and according to my sisters i make better tasting refried beans than my mom so i feel like i have enough knowledge to say that

Wondering what happens to the peppercorns, bay leaf, fresh thyme sprigs, etc. How do you fish that out?

Honestly, I don't mind the peppercorns so I leave them in there. If you don't want them, just omit or add freshly cracked black pepper. The herbs/bay leaves are pretty easy to pick out when the beans are done cooking (using a spoon or slotted spoon).

That's confusing. The reason we soak is to prevent us consuming the starch that makes us fart. It makes sense that if you decide to soak the beans, you discard the soak water (aka fart water). So, the delay function would not be that great idea.

I get what you’re saying, but I’ve noticed a significant difference between (a) not soaking beans at all and (b) using the delay start method. I have little to no gas with the latter method. Of course if you are very sensitive to beans and have trouble digesting them, I don’t recommend this method, as I mentioned in the video.
