Hi, Why do my golden beets turn black within hours or a day after I steam them?

Gold beets turn brown or even black when they oxidize. The skin is a protective layer and once that is removed, or once the beet is sliced, oxidation begins. Cooking beets with the skin on and storing the cooked beets in an airtight container will help slow down the process.

Yes! They draw the moisture out of the vegetable. So separate the beets from the leaves and store them separately. Don't toss the tops, because they are delicious sauteed.

I thought that your direction on how to bake beets was right on. I tried and discovered that peeling the skin is a (I’ll be nice-difficult). I ended up throwing the beets away. No subscription from me.
