Kebbe are cutlets made from bulgur, minced meat (without fat) with spices and chopped onions.
⚫INGREDIENTS:
For the bulgur dough:
480g finely ground bulgur
190g onion
1 tbsp cumin
2 tbsp flour
340ml water
250g minced meat
1/2 tsp ground white pepper
Salt to taste
For the kebbe filling:
800g minced meat
100g walnuts
1 tsp seasoning "7 spices"
Salt to taste
For yogurt:
2kg yogurt
1kg meat (lamb, beef)
100g rice
1 tbsp cornstarch
1 tbsp crushed garlic
1 tbsp dried mint
Salt to taste
⚫COOKING:
STEP 1
In a deep bowl, mix the ingredients: bulgur, flour, kamun, pureed onion, salt to taste, then pour water at room temperature and leave until the bulgur absorbs all the water, about 30 minutes.
During this time, it will absorb moisture and increase in volume.
While the bulgur is soaking, bring the minced meat (without a single fat❗️) to a creamy state in a blender with the addition of salt.
Minced meat should be plastic, without grains.
Place the soaked bulgur in the bowl of a meat grinder and chop.
This is necessary in order to give the test a uniform structure.
The procedure is carried out in 2 steps.
Next, add the creamy minced meat to the bulgur, mix with your hands, then pass through the meat grinder again.
STEP:2
Install the kebbe maker.
It consists of two parts, which are a nozzle with a truncated cone, and the second circle with a rounded bulge.
Put the dough from the bulgur into the bowl of the electric meat grinder and with the help of the nozzle, the minced meat will come out in the form of a meat tube for future kebbe.
Lay the blanks on a tray, be sure to cover with cling film.
FILLING FOR KEBBE:
In a small amount of oil, fry the minced meat until tender, adding salt and seasoning. Cook the minced meat until cooked and there is no liquid
At the end of the preparation of the filling, add walnuts (you can use pine nuts)
STEP:3
Cut the finished tubules into 5 cm.
Next, stuff the blanks with minced meat, then moisten your fingers a little in water, collect the ends together and form a small round cutlet with elongated edges.
SECOND OPTION HOW TO MAKE TUBES WITHOUT NOZZLES.
We tear off a piece from the dough, form a bun. Wet the fingers in starch with water and with the index finger of the right hand, we slowly begin to make a recess in the middle, while rotating the dough in the left hand and forming thin walls at the kebbe.
We put the filling, gather the ends together and form a small round cutlet with elongated edges.
STEP:4
In a saucepan (no heat) put the yogurt, add the cornstarch, beat everything together very well until creamy before turning on the heat under the saucepan.
Next, turn on the fire under the pan and constantly stir in one direction so that the yogurt does not curdle, bring almost to a boil.
Next, add boiled meat with rice, garlic, dried mint and mix.
Then put boiled kebbe in yogurt and cook for 5 minutes over low heat. Salt if necessary.
