How to cook buttermilk soup with local vegetables and a delicious raspberry tea
Pour the obtained yogurt into a special container for making butter and add some water and mix it for about half an hour until the butter separates from the yogurt inside the container.
After emptying the container and separating the butter from the yogurt, the resulting buttermilk is used for drinking or cooking buttermilk soup.
The buttermilk of this dish is obtained by the traditional method, after cooking and becoming lukewarm, we combine fresh cow's milk with a very small amount of buttermilk or yogurt and cover it, after a few hours this milk turns into yogurt;

The vegetables used in this dish are usually grown around local springs and gardens. Coriander, mint and garlic are the herbs used in this dish and can be changed according to taste.

How to prepare:
Pour the washed rice, flour and egg into a container and mix well until it is diluted, pour the obtained solution into the buttermilk and put it on the heat.

This brings back my childhood memories of making butter with my grandparents. As a little boy, this required to much attention to churn the butter out. But I did it very often because we had about 100 milk cows. Everything we eat was raised on the farm hogs, beef, chicken, etc. The summer food canning by my parents and fall harvest was a ritual shared by the family. Today I own that farm which is a beef ranch. I left the farm for corporate wealth and now I am back where my parents stated I would always belong. Home! So I am actually reliving my rural life too. We share a common love for our life’s journey.

We also used to have milk soup when I was a child in Norway. But that one was a lot more simple, sweetened whole milk with macaroni, which is why it was also called macaroni soup. But we usually had it as a side dish to pancakes/crepes, often with homemade blueberry jam made with small, wild blueberries (much darker and more rich in flavor than the large American bush blueberries). Some of the kids would just put sugar on the pancakes too. Us kids were always so happy if we got milk soup instead of yellow pea soup or tomato soup with our pancakes for supper, because we loved that soup with macaroni… I’ve made it a couple of times after I grew up, once I thickened it a little with corn starch and I think it was much better then. I also made it with some kind of plant milk once (since I have been on a plant based diet for many years), also with a little corn starch, and I think that was even better! 🤗 I must try making a version with vegetables next time, veggies and macaroni! 🤗
