Hi guys and welcome back to my channel. On this video, I show a quick and easy way to make Caribbean rice and peas. I used red kidney beans and fresh coconut milk for this dish. Please note that you can use can kidney beans, a can of coconut milk or some creamed coconut. See below for ingredients and measurements used in this dish
1 cup or 236g dried kidney beans (soaked overnight)
1 cup or 236g golden sella basmati rice ( can be substituted with any parboiled or long grain rice of your choice)
1/2 litre/500ml or 2 cups fresh coconut milk ( or 1 tin and 1 cup water)
1 scallion/green onion
5 pimento seeds
1 small onion
1 tsp or 5g salt
1 Knorr vegetable stockpot
10g unsalted butter (can be substituted with a vegan version)
