Thanks man this video is helpful for a newbie(me).I always end up overcooking chicken breast which turns out very dry. The second method seems the most time-efficient yet effective, will try that out.

Use a thermometer and lift when the coldest spot is 60°C, it's gonna be nice and juicy

With SS pans it is best you cool it a bit after it reaches the proper temperature for cooking. I always cook my eggs on it with no sticking at all.

Here in Japan, everything is wrapped in plastic and you can't mix and match what you want (in my experience), but I hear it wasn't always that way. I also assume it hasn't always been that way haha it must be a relatively recent development. In Ireland, you can go to the butchers.

Are you sure 70 degrees C is good enough temperature get a well cooked chicken at it's inside?

Yes it is. You can take it up to 74-75 but normally when you pull it from the pan at 70 it goes up a few degrees and finishes cooking off the pan from the residual heat.

It's more than enough. MinuteFood has a good video about it (it's a real sciency channel, you can trust it). Even 60° is enough tbh, but make sure that is the coldest spot. It also stops being "pink" about 60.

I lift the breasts when the coldest spot is 60°. It safe enough because it is going to stay at this temp for some time. Also must use stainless steel, just get the temp right. And make a pan sauce after. And don't cheap out on oil. You're already eating the most lean meat. Better to eat breast with some cooking oil than a fatty piece of pork or beef
