I have it every year on Saint Patrick’s day. My mom just boils potatoes and cabbage and the corn beef together and puts in the seasoning. It’s super easy

@@BeefForDinner yes it certainly was. I only added 3 cups of water to begin with so it was rather dry and wasn’t as tender as the ones I’ve made with water covered it. But your way is definitely my way now. 💕

This looks delicious! I’m cooking a similar one this weekend but I only want to use a part of it. I can’t decide if I should cook the whole and freeze half for later, or cut it in half before cooking and freeze half uncooked to cook later. It wasn’t previously frozen so no trouble there.

I would cook the entire roast. Once the meat is cooked it freezes great.

Goofy question, if you did 2 slabs of meat, would you still keep it at about 3 cups of water? Assuming water level sits just below the fat side up?

Yes or at least 80% of the meat, a can of light beer with water also adds flavor

@@rodh597 thank you. When I watched the video a few times I saw him add 3 cups of water. I’ve never made it this way before so it feels kinda odd to not have the water covering it. Thanks for the suggestion of adding beer. My daughter can’t have any gluten and it’s rather hard to find gf beers. I do appreciate your response. I think I better go back and add more. 😉🍀

The meat does not need to be covered in water/stock to cook. The moisture in the pot and meat will cook the meat nicely.

@@louettesommers8594 GF beers are often made with wheat to ferment. They are hard to find. If the roast is covered during the cooking process with snug fitting lid, the meat does not need to be submerged in liquid. It will braise nicely slow and low.

Good call on making your own seasoning. I'm sure the producer included adequate spices but freshness is the most important part. Whole dish reminds me of my ma's recipe, County Cork representing. Cheers!
