Hospitality? What? Great to hear a restaurateur talk about that and share his appreciation for the way he was treated abroad. Hospitality is a lost art here in the PNW. I was in North Carolina last year and it was alive and well. Noticeably different and valued. Made the eating experience so much better. When I'm in DC I'm eating there... Thanks for the video.

I had that exact experience with people being like "that's not how my grandma made it!" because there are so many Iranians, and Syrians, and Lebanese in Denmark, and I love cooking their foods with them. At the end of the day I always ask: "But. Is it good?" and they're like "Yeah, it's pretty good." Don't be too upset about making stuff differently guys, food is supposed to evolve and travel. :)

The argument for using a different spice should be: "Why is pepper OK but not something else?" Answer: "Because we've always done it that way." which is a dumb reason. Ironically, pepper was originally used to cover the flavor of meat that had gone rancid. Salt, I understand... it's a fundamental ingredient that's necessary for our bodies to function. But why is it that the only other spice that you see on a table is pepper? There are a ton of fantastic spices that are can and should accompany food. Spices can improve beef or steak just as well as it can improve pork or poultry. We just need to get over our biases.

@@end.olives like the chili powder they used. Or cumin, cayenne, five spice, coriander, or any number of other spices used in meat dishes all around the world. Pepper is far from the only good spice on meat.

Pepper, or any spice in general, wasn't used to cover rancid flavor. In Europe, If you were rich enough to buy spice, you were definitely rich enough to have fresh meat everyday at your table. Anywhere else in the world, if you had access to pepper or anykind of spice, you would just use it in your food like westerners use their own herbs.

Salt and pepper on steak is literally an American Standard......pretty sure we can all agree on that......I would see why Brent feels that way. But we all gotta understand in different parts of the world, they use a whole lot of spices to enhance the taste of the meat. Which I have to say isnt bad. I like it. Salt and pepper is an American thing tho. Thats what I put on my steaks, and so does everyone who was born here. It comes natural to us. But I would challenge you all to step outta your comfort zone, and spice it up a little. I would love to try that seasoning from Georgia.

Weird that one of the sustainable development goals of the UN is to get people in developing countries move away from cooking with biomass, but in developed countries, restaurants use the primordial feeling as a novelty. I hope they have technology that reduces emissions and a vent that prevents people from inhaling the smoke. I also hope they are sponsoring the planting of more trees to replace all the wood they use.
