Just tried Eddoes for the first time and they are so delicious and easy to prepare. They require much less time cooking than potatoes and have an earthy, wholesome flavour. Thank you so much. (no itchy, no scratchy!!! 😉
This Englishman is going to try eddoes after picking some up in my local caribbean store. I'll let you know how it goes. Got some saltfish so going to try the Juanita Rivas too. I usually do it with Ackee but that is about £5 a tin here.

Decided to do my traditional clam chowder with eddoes instead of potatoes. First time around and was a bit worried since the disclaimer in Finnish supermarket said "MUST BE COOKED THOROUGHLY! NOT TO BE CONSUMED RAW!". Thanks for this update, treated it just like potatoes and everything went well. :)

I am Brazilian , my mother cooked this a lot for us , olive oil , onions e garlic ,make them small pieces , salt and add little water , when to finished add cilantro . I will try your recipes . Thanks

Hello Foodfaq, What makes your hand itchy after working with eddoes? It is necessary to find out if you have not eaten before. Veggies contain different chemicals and some could be allergic or potentially lethal. In my opinion it is necessary to have that info at hand.

Nice video. The people of Cyprus have a related veg to the Eddoes. We use it in a stew of pork or chicken with tomatoes, green beans, peas and other veg. Lightly saute an onion on the top in a pan and then put it aside. Seal 1/2 Kilo of meat in the pan then add the sauteed onion. Then add 1 tin tomatoes, 1 cup french beans and any other vegetable you like. Add 1 cup water. once it's cooking nice and hot put it in the oven at around 180 degrees C for about 30-45 minutes. Serve with fresh bread.

Bad way. Eddoes should never be peeled before cooking. They're ruined. They're not yautias. You can't treat them like yautias. You wash it, boiling it, and then peel it with hand. That's it. They're natively grown in China, we domesticated them, spreaded it to the Caribbeans and the world, so we're qualified to give these guidance.

I had Chayote that caused me severe problems with my hands. I would therefore be careful touching the Eddoes. I have cooked them with the skin on and peeled when slightly cooled. MMMMM Delicious mashed or fried in coconut oil and garlic.

I have very sensitive skin, but had no issues with the Edo. YAY! I fried the Edo in some EVOO (extra virgin olive oil) and they were tasty. (I forgot to add salt or pepper.)There is supposed to be more fiber in an Edo than a potato - I couldn't tell. In fact, I thought the mouth feel was more creamy, and the taste had a hint of sweetness that a potato doesn't have. Yummy. Have you ever tried to grow an Edo?

They peeled and cooked fine, then I mashed them and added them with some lentils to a fried mess. Tasted good. Next time I'll leave 'em whole and eat them separately.
