Watching from Ghana. I love Abomu, it's a fast dish. 😋 Most people I know, prefer green plantains. If it's green plantains, the peels will go off, but if it's ripe I prefer keeping the peels on. It prevents it from soaking too much water. I love ripe but firm plantains any day. How do I preserve ripe plantains? It's in abundance now and I have so much of it. I don't like it too soft either. Any suggestions? @Sweet Adjeley. 💝👌 Your meals are always colorful and inviting.

I cook my plantains with the peel, makes it easier to unpeeled it and it also keeps it warm for a while

My alternative to garden eggs is when garden eggs become scarce or expensive. It just tastes about the same.The food is very inviting 😋😋😋

chocho is a good alternative to garden eggs. just peel, chop, cook and mash. available from the vegetable vendors in Ghana or Asian shops in the US.

Palm oil is naturally red/orange. It is processed to make it look like any other color.
