Watching from Ghana. I love Abomu, it's a fast dish. 😋 Most people I know, prefer green plantains. If it's green plantains, the peels will go off, but if it's ripe I prefer keeping the peels on. It prevents it from soaking too much water. I love ripe but firm plantains any day. How do I preserve ripe plantains? It's in abundance now and I have so much of it. I don't like it too soft either. chocho is a good alternative to garden eggs. just peel, chop, cook and mash. available from the vegetable vendors in Ghana or Asian shops in the US.
