Dear friends I harvested some produce from my garden and whipped up this very delicious eggplant stew. Very simple, very few ingredients but then so so delicious. Finding white garden eggs in our part of the world is very rare but eggplants (of course from same family) are so perfect as substitute. I hope you enjoy this video. Hello! We made your aubergine stew today in Peru for mother's day lunch. We didn't have that kind of fish so instead we used meatballs, it was delicious. Thank you so much for the great recipe.

Sis try steaming the eggplant instead of boiling it. My mum taught me this and it works so well. It's mainly to keep all the nutrients in the food instead of pouring some away through the water. I'm trying your recipe tonight! I can't stop salivating.

Well hello there. 🥰LOVE THIS VIDEO. I totally understand your passion for gardening. My grandfather allowed me to "help" him plant and harvest our vegetables and flowers. It is an indescribable experience. JOYFUL! Gardening has been used in the penal system on hard-core criminals who have committed heinous acts... as a form of rehabilitation and therapy. The studies indicate it teaches them to love, honor, and respect LIFE. 👏👏👏🙏 Society should implement this BEFORE they end up in prison. This is supper delicious. Two thumbs up. Great African taste. I suggest you can reserve the eggplant stock for any other purpose even to drink it when it is warm or cold, for it's nutritional value.

I am here with lots of eggplant, Roma tomatoes, green bell pepper that i harvested today. I was looking for a recipe to use them in a dish. I have no fish, but i have some Italian sausage. So, i will make your stew with them. Thanks for this very helpful video! Yum yum, gotta go get to chopping, you made me hungry!

I know that satisfaction you get from harvesting fruits of your labour from your own garden. I experienced that this year...many fresh tomatoes & potatoes. I can't wait to expand next year. Thanks for this amazing video

Yes I make Curry eggplant with saltfish sometimes I but Irish potatoes it is very delicious you can use chicken or what ever meat you choose

I just finished a bowl of this. It's 3:13 am EST... It is so good. I am full..It is sold in Dominican Restaurants 🇩🇴 This is a great recipe. I will try this. Thanks We Caribbean Island people have salt fish too. I have 4 Aquariums. 😢 😭 the fish.

The pot you boil the cassava and yams in is so beautiful, what kind of pot is that. You make want to grow eggplant 🍆 in my garage, and I don't even eat eggplant 😁

Hi, that little piece on the tomato where the stem comes from is healthy for You to eat. It's not much harder then the tomato. Oh I can't do the fish head. What kind of oil is that? Did You say Palm oil? I've never had a green thumb ,but my Mom did. She didn't do it until She remarried & I think He started Her,but they had a big garden. Once they went on Vacation & had me take care of their garden. I gave the neighbor tomatoes & string beans my Mom was so mad at me. I said I didn't want it to go bad.😷🤗🐽✌❤, Sheryl

😍. I made similar recipe recently but I didn’t use the African fish.. I am doing this next time I still have eggplant 🍆 left. Thanks for the recipe, I roasted the eggplant and tomatoes and the flavor was wow.

I never toss the skin or the seeds I eat everything.I also use it in my peanut soup with the skin and the seed.I Also do not strain my blended peanuts i also add cashews blended too.I donot strain the milk from the nuts.I boil everything.I also use the cow foot cow skin goat and smoked red herring and my home made smoked fish I smoke in the oven and smoke turkey legs lots of ockro and 1 big carrot sliced and spinach. I Cant do carbs doctors order.So I don't use the fufu or cassava or yams.I looooove ghana yam and so sorry my body cant handle sugar.So I enjoy my hearty soup By the time I get done with that heavy soup I dont need any yam or cassava.I learn about peanut soup from you. I used all the spices you showed in the video . Star anise garlic ginger thyme onions tomato paste everything. I am very gratefull.Thanks🇯🇲🇺🇸🍽🍆🥕🍅🌶🍗🥩🥜🎏

Hi this is my first time watching your channel on October 31,2020 and I did some research on tilapia fish and what I found out is that tilapia is a geneticallly modified fish! So you may get some health benefits from the other foods you name but as far as tilapia No health benefits! By the way I Love your garden and you inspire me to grow something!😘

You people say anything on this internet. Your "resesrch" is giving odd results. Tilapia is NOT genetically modified. But it has been selectively bred for farming. Please be accurate.

Can I give you a small tip with the washing of vegetables. When I wash my vegetables; DON'T BE PUT OFF! But I use a small amount of washing up liquid ( Fairy's original ) I do this because I made a comparison between just washing them (veg) with water and then with washing up liquid and the difference was incredible! The DIRT that game from them! And this is AFTER having washed them with plain water just to show you! 😳 The result: My veg was squeaky to the touch and really shiny and super clean! I have always used liquid on my tomatoes because there is a chemical on them which the washing up liquid completely kills, so it's definitely a winner for me! Hive it a try (plain/original only) Ps EGGPLANTS ARE MY ABSOLUTE FAVOURITE!! I can't wait to try this entire meal! 🍆🍅🍆🌶🍆🥔🍆🍅🍆 😋 Mmmm! Thank you for the recipe! 🥰😘❤🧡💛

I tried this as well , and goodness every single plate was wiped clean . We had it with yam and ripe plantain. And oh some salmon as well. It was nice paaaaa.

Big fan of ur cooking and love it . But I suggest a small amount of water should be used to steam the eggplant to avoid sieving away the stock as the nutrient are leash into the stock.
