I cover my pan with the lid so the top of the egg gets more heat and it cooks nicely, add a tablespoon of water to steam the top works well also.

I’m 56, Professional Engineer, and I have never been able to cook an over easy egg. 4/5 yolks break when I crack the egg. The others break when I flip them.

I'll give this a go. I usually use a circular metal egg ring so my fried eggs come out perfectly round and I rarely ever break a yolk when flipping to cook both sides, but I quite like the look of the egg you cooked for demonstration. Your egg cooked much quicker than mine do, this is because when using an egg ring the eggs come out approximately 1/2 inch, or 12mm thick for the white part, where as not using an egg ring means the egg spreads out wider and the thickness is greatly reduced. Thank you for teaching me this way, much appreciated. I have now subscribed to your channel 😎

Just did this without the oil on top but the spoon changed the way I flipped the egg and it didn’t go everywhere thank you so much. Eventually I’ll get good enough to do it without the spoon

Keep the heat in the pan down to medium it will take longer but you will have a softer white not crispy 👍

Depends a little on the size of your pan, smaller pan less oil, but as a guide about 150/200ml and don’t forget you can store it in a jar or bottle and then reuse it too 👍

Cooking temperature here is too high. Eggs should not be browned around the edges of the white. Cooking at these high temperatures makes the white (albumen) tough and rubbery. Lower temps allow the white to cook more slowly and evenly. This is a hash-house egg, not a properly cooked egg.

@ - try it yourself. Cook one egg fast and hot and cook the next one at lower heat, slower to the same “doneness”. Then compare by eating. The albumen (white) of the fast cooked egg is considerably more rubbery.
