Thanks for the recipe. Can you use Castelvetrano olives? They are my favorite olive. I buy them from BJ’s store but have only eaten them in a salad never cooked in a recipe.

Nice recipe but... I would trade some thyme for the fresh basil and finish with a touch of a dry white wine and stirred in whole butter trying to keep the butter from breaking (like a burre blanc) so you get a pan sauce. IMHO. ;) Chef cheat: If the sauce breaks, a tiny amount of blonde roux can pull it back together, but emergency bandaid only. Cheers... 🤙

I would say just try it with the olives, but don't eat the olives and you will still get the benefits and I think you will be surprised as to how good it is - otherwise, you don't need to substitute, you can just leave them out👍👍

Is it all types of olives you don't like? If it is then at that point I'd go with eggplant if you're looking for something a bit different. Most would just switch to tomato for numerous reasons. Hope that helps you. BTW, 61yr old chef w/30+ yrs exp here. ;). Love this channel!

Yes, you can certainly add fish stock so do both....fish stock and the olive oil 👍👍
