It is November 3, 2023. I JUST tried this. Exactly as prescribed in the video, no deviations. And the result was remarkable. The results were so good it is likely that it will change the way I buy beef altogether. The patties had a crisp and browned exterior, and were cooked to well done (but not dry) in the middle. Life-changing video!

I’m just cooked two grass-fed patties from Costco using your instructions; they came out delicious. I sautéed some sweet onions next to the patties for added flavor and melted some Muenster cheese on the patties. Thank you!

That sounds delicious! I love doing that with onions for the burger, and Muenster really does make it great. The patties I used were probably the same ones. Maybe two minutes on the counter at most if the pan is heating, but yeah, hard frozen. I'm happy I could help you with it.

When you let it rest after the heat goes off for about 2 minutes. Otherwise, if you like melty cheese and crispy bits then add it a bit before you turn it off.

What about using butter instead of oil? Is that a no-no? I prefer the taste of butter over oil...😊 I have a dozen frozen patties I need to cook and not waste. I really hate wasting food.

Butter also works, but beware that it burns much more readily than oil. I'm with you on not wasting either!

Would have been nice if you gave the temp for an electric stove top , instead of only gas. Would think that this is a cooking channel you would be more specific for those of us trying to learn.

Yes, it is to be covered 2 minutes on each side. However, there is some play in there. The cover protects against spitting oil, but it also increases/ decreases the ambient temperature around the patty. By adjusting the cover to hold in or release steam, one can adjust the rareness of the patty as it cooks. I was scoping it out online, and I think that if you have a small ramekin made of ceramic or metal, then it's possible to put it in with some water in it. The water will create a higher humidity inside and may serve to help it stay juicier.

@@DIYGourmet That could help! I just did them on medium heat for 6 minutes flipping halfway, and they turned out much better. They were thawed in the fridge for a day, so they didn’t need as long to cook.

Official numbers say it should be 140F minimum on the inside but I don't always get it quite there, and it has worked well so far. If ever I cooked them from thawed I make sure it's about a minute that it stays at 140F on the inside.

@@DIYGourmet think that would be the key. I’ve been trying different ways to cook Sam’s Choice angus burgers from frozen. I try as close to 160. But I should let them rest well before that. They aren’t rubbery or dry. Just not hitting it perfectly

@Justin the key from what I have gleaned over the years about 160 is that is if it is treated as thawed and the minimum time and heat combination then it works for immediate consumption. However, and this is spoken of less often because the method is slightly more precise, is that by using 140 and rest time, then it can take its time. The thing with 140 done right is getting it there, maybe slightly above, and then letting it rest under a cover for a couple of minutes; not too far off the heat source for a slower temp loss gradient.

@Justin It does get difficult being a bachelor and not being able to rock larger serving sizes and bulk prep. I have one for the big frozen boneless skinless breasts coming soon that comes out nice directly from the freezer too. I'm really glad this helped, thanks for asking about it.

See how one side is cooked in middle and other side cooked around the edges........ don't look right, maybe a bacon press

lid off with a bit more time on the other side makes it more crisp on that side. it's cooked through, but the lid off does crisp the patty a bit more.
