Here's the steps, so helpful video! *Buy the right/correct type of rice and store it correctly. *Wash rice 3-4 times & drain *Place in pot with 1 to 1 ratio rice to water *Soak rice at least 1/2 hour *Cook on High heat at first till boiling (about 10 minutes) * Then turn down to very low and set timer/cook for 12 minutes *Turn heat off, let sit to steam for 10 minutes, do not open lid *Fluff rice with large spoon or fork, don't mash it.

A tip for those who use Californian Japanese rice (Nishiki for instance) use 1 to 1.25 ratio rice to water otherwise the bottom part burns, well at least for me.

Thank you so much for your video! Can you tell me what number is the temperature you use for ''low heat'' and ''high heat'' on your induction stove? I used to make perfect koshihikari rice on my former gas stove, but now that I'm making rice on induction stove and with my creuset, the rice turns out off, a bit mushy and overcooked but some parts are still hard, not entirely cooked. This doesn't happen with my normal, non heavy pot (with a very thin lid), so not sure what is happening here with the combination of creuset + induction... Any ideas?

Thanks for the great video. I followed your recipe - everything seemed perfect, nothing burned, but there’s a 'but'. After I lifted the lid for the first time to stir the rice - it was perfect, nothing was stuck, everything was cooked, and there was no water left. So I stirred it but didn’t cover it again. A few minutes later, when I came to serve the rice, I could scoop up the rice that wasn’t on the bottom or sides, but the rest was stuck. So, after the first stir, should I have covered it again? And then, when serving, do I need to do it quickly before the rice sticks? Any other tips to prevent this? It's a pity, quite a bit of rice got stuck to the bottom and sides.

You always keep the lid on. Japanese rice is very sticky and it does stock to the pot. Use wet spatula to scrape it off.

So I wanted to prepare my lunch with this recipe and it worked awesome. One small problem I had was I couldnt get the specific Rice you mentioned and I use my own rice (Persian White Rice) and it turned out a bit dry. So I guess I'll make another batch later and add more than 1cup of water (cuz our traditional recepie uses about half a cup more and I think it's bcuz of the rice itself) or I prolong the soaking part. Personally, I've found the rice, like bread, keeps much better frozen than refrigerated. I portion them into sandwich size Ziploc bags and stack them flat in the freezer. You can reheat them in the microwave.

We sometimes make crispy rice on purpose 😉. I normally use a pot without the little hole.

I’m not sure what you mean by “regular” rice but it should be sticky rice.

I have one question: do I need to use Donabe to cook perfect rise or is it the same as a normal pot? Because Ive seen all write that everyone needs it when he wants to cook best rice like japan does

Thick heavy cast iron pot is considered good but any pot even frying pan will do😉.

Are you using a rice cooker cup or regular measuring cup?

Rice cooker measuring cup when I use rice cooker and regular one when I use pot. But it doesn’t really matter as far as rice and water are 1 to 1.

I have a question, after you soak the rice for 30 min do you add another 5cups of water before you cook it or cook it right away after you soak it for 30 min??? pls answer thanks

It’s not a dump question at all ! Rice cooker is just fine as far as you don’t keep the rice in it too long after it’s done😉 !

Tysm I didn’t know how to store my cooked rice and it would always end up getting hard and all the moisture in the rice would be gone I just moved to Japan and these are the things I need to know since most Asian countries main source of food is rice I literally se it in everything here in Japan.
