@@LeonaPrime I still have a lot to learn. Right now though I would cook them as he is doing, and add them when they are almost done. Their is also the types of spices one should use so I have no clue how to prepare the soup.

Je l'ai fait ce soir avec 2 cœurs et 2 foies d'élans 🦌🦌 (moose). C'était la première fois que je cuisinait les abats... c'était une réussite ! Belle-maman qui en mange souvent, mais cuit au four, a dit que c'était super 👌 et mon mari à adoré! J'ai juste ajouté quelques gros morceaux de poivrons rouges par habitude, et j'ai fait des naans à l'ail et aux fines herbes pour accompagner comme je n'avais pas de pain sous la main. sinon jai tout fait pareil, même la vinaigrette et sans regret ! Merci beaucoup, c'est bien expliqué ! Il en reste beaucoup forcément, on verra si ca se garde bien au frais..

Wow thank you so much for this video! I am still learning how to cook meat and have never tried cooking any organ meat. I have a lot of health issues and need to increase my intake of nutrient dense food. Great instruction. That dipping sauce sounds amazing. I found a local farmer selling beef liver, heart and kidney for really cheap. About 1/4 the price of the cheapest meat they sell. It's funny but Americans won't eat the best parts. They practically give away the tongue. I'm going to talk to him about his sheep next time I go out there.

Awesome looking dish. Going to make it this week. What is the green seasoning on top? Also, how long did you cook the heart before adding the kidney? I'm going to cook the heart in a ceramic frying pan, as it heats very gently and slowly, which will be perfect for the heart I'm hoping.

I found the video interesting from the organ perspective but take issue with the idea that lamb needs to be well done. Good lamb can be cooked medium rare with no issues and is the most popular way to eat it where I'm from, whether that be the ribs, the leg, the loins, etc.

The fat it's self may render down but your are seemingly not removing the thin, transparent tissue called silver skin from the heart and that makes it very hard to chew. The meat without the membrane and fat is lean and tender. Give that a try.

Boomer Taylor I don’t find it tough at all when I cook it that way. Just keep the heart small size. I heard that the cow heart is tougher. Yes the fat will render fast.

You can leave it in the water for couple of hours after washing it. Sometimes if its not properly washed, you can smell a hint of urine tbh

SvemirskiKubanac why not .. I’ll make sure that smell is out. Even though washing meats with water is not recommended as it help and spend up the growth of the bacteria but I’ll cut the kidney open and wash it if there that smell.

knothead35 people do that as kidney tastes a little "gamey", as if its just been butchered. Especially this is the sure thing to do with fresh(hunted) meat. If you buy it from the store or fron your local butcher, then it's already been rested so there's no need.

To my knowledge, if it tastes bad or smells bad even after few hours of cooking it is bad. I won’t keep leftovers or open packages in my refrigerator more than five days if there is no safety guidelines on the package. Also food shouldn’t stay out for more tan 4 hours of total time after it’s prepared.

To my knowledge, It is never a good idea to wash any meats. Washing can only lead to cross-contamination. Properly cocked meats is safe to eat.
