I made brisket in a deep pit after I watched this video it was amazing this man is a genius .the brisket was falling apart super soft and juicy next level

Use bailing wire and wrap it around the package it self with a loop at the top. That way you wont struggle to get it and the cage out at the same time thats how we do it in our pit but its much bigger and alil deeper

I lived in Mexico City for quite a few years...Loved the barbacoa! :( When doing lamb/goat, they would save the drippings and make a delicious consome with white corn. (also used to make pozole)

Yes, the lamb dripping make the best consomme! I think it probably is tastier than the lamb itself (and I love lamb)!

Hola,Buen video. Hay una forma de hacer mejor la carne en el pozo. Es usando una olla de acero inox. Que sea vaporera, se le agrega agua y la parrilla en la olla, luego la carne envuelta en hoja de bastago de platano, luego la tapadera. Van a notar mas sabor ya que se filta un poco el humo de la leña y la carne mas jugosa. Si prefieren No usar tapadera, pueden cerrar la olla con papel aluminio , va a dejar pasar yn poco de humo y mantener la humedad. Saludos desde Guadalajara Mexico.

Hi, Houses Built Tiny! There isn’t any grease that collects in the pit as the meats are either wrapped or in a steam pot. It’s different from smoking meat. Check out the brisket or lamb barbacoa video to learn more! Saludos!

This is awesome. I found this video looking for ideas on another deep pit. I had one at our previous house but 5x5x5 is way to big. I love your pit where would I find that lid you have? Google doesn't seem to be able to locate it.

Hola Julian! Sorry for the late response. If you search "Mexican barbacoa pits" you'll see videos of folks cooking in the ground a number of different ways -- everything from simple holes to using steel drums. Saludos!

Hola Jimmy! I don't recall whether we used sour cream that day or Mexican cream. Either is great with tacos, although Mexican cream isn't as tart as sour cream. Saludos!

So all that work building a fire in the ground then wrapped that briket in foil it would get no more flavor I'm not sure if you were going for barbacoa but one of the reason they wrap in leaves and use a consume bucket is to get smoky steam on the meat and the meat juices fla or the consume just seem like you did alot of extra steps for the same outcome of a regular oven

Hey we are doing a pit now. We used a lot, a lot of wood in our pit. We are worried it is not so hot. If you have a big bed, do you think just enough time and not letting too much heat escape, it’ll work or do we have danger of the meat spoiling?

Hi Samuel, I can only tell you what has consistently worked for me, but if you have a bed of coals 8"-10" deep and seal it well after the meat is in then you should be in good shape after 6 hours. This assumes the meat wasn't frozen when it went in. I was paranoid enough about getting the meat cooked that I bought temperature probes. I bought a Soraken kit on Amazon for $50 and it connects via Bluetooth with your phone. Works great. That probably doesn't help you right now, but it's definitely worth it next time.
