Ingredients:
4 boneless, skinless chicken breasts
2 cups baby potatoes, halved
1 cup baby carrots
1 cup green beans, trimmed
3 tablespoons olive oil
4 cloves garlic, minced
Juice of 1 lemon
Zest of 1 lemon
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat the oven: Preheat your oven to 400°F (200°C).
Prepare the marinade: In a small bowl, whisk together the olive oil, minced garlic, lemon juice, lemon zest, dried oregano, dried thyme, salt, and pepper.
Marinate the chicken: Place the chicken breasts in a large zip-top bag or a shallow dish. Pour half of the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and let it marinate for at least 30 minutes (you can also marinate it overnight in the refrigerator for more flavor).
Prepare the vegetables: In a large bowl, combine the baby potatoes, baby carrots, and green beans. Pour the remaining marinade over the vegetables and toss to coat.
Assemble the dish: On a large baking sheet, arrange the marinated chicken breasts in the center. Surround the chicken with the marinated vegetables, spreading them out evenly.
Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (75°C).
Broil (optional): If you want a bit of extra color and crispiness, you can broil the dish for an additional 2-3 minutes after baking. Just keep an eye on it to prevent burning.
Garnish and serve: Remove the baking sheet from the oven and let the dish rest for a few minutes. Garnish with chopped fresh parsley before serving.
