Oh my god blessed Mrs. Cook. I'm white English man. My wife mixed race. She always said I cook better dumpling that her. During covid19 all my shops run out of self raising flour. I told wife I can cook with plain. She was like "no you can't " so I search youtube and found you my saviour. I knew this could be..... now I followed your instructions to the word (I love the way you chat too) and guess what Mrs....... the dumpling were perfect and so nice with my curry mutton. Wow, the amazing and rare sound of someone who knows what they are talking about! I feel like I didn't just get an idea here, I got some expertise! I can do it myself, and do a good job. I've never seen a flour dumpling before, and I never will unless I make it myself I guess. This looks like the basis of a very solid meal for about nothing. This is really what KZbin is ABOUT! I don't know a THING about Jamaican food, and just suddenly started to think I was missing something.

Thank you sooo much Ms Debbie. Those are some good tips about letting the dough sit to get consistency and that dumpling not ready when its floating. Lots of yard food shops in Manchester England, for me the best is called Tastes,s in northern. Two women one looks just like Aunty here. I went one time with a few friends and these beautiful women had a big smile on their faces cos of all the respect they were receiving from us rude bwoys. But the food is amazing and they pile it up cos they love to feed you up.

Funny that you say the more you knead your dumpling the better it is. I was always taught never overwork/knead better to slightly underwork it since it's easy to correct also depending how soft or slightly sticky it is even when you roll it out you must use flour anyways so it's fine. But still looks good :) But yes for a jamaican dumpling it's best to knead it until it's not sticky and slightly firm.
