When my Asian girlfriend showed me the thing with your finger to measure the water I did not believe it. I couldn't understand how it could be the samesince everybody's fingers are different and the amount of rice and size of pot are different. After I made it myself a couple times and seeing her do it dozens of times I realized it works every time. coming from a home where we only ate rice once or twice a month I really should have trusted her since she'd been eating rice three times a day for over 20 years

I have used the rice cooker all my life until college where we weren't allowed to bring rice cookers. That detail about covering with the lid after the boiling water level matches the rice level is KEY because I ended up with rice liquid all over the stove and wet rice. Thanks, Adam!

This is pretty much exactly how my mom taught me to make rice and I was so happy when you washed because I feel like a lot of people skip over that step! The only thing I was taught different is my mom always told me to turn the heat off even if there is some water left since the pot is still hot and the rice will finish cooking.

The result looks great, I have got to try it with the lid off and then on, just like you did. After watching "Jiro dreams of sushi" I have started to cook my rice in a pot with the lid on, and a big bucket of water placed on top for pressure. 2 minutes on high heat or until I see steam, and 15 minutes on the lowest setting. After watching a video from the Sushi Assiciation of Japan I have started to palm the rice in a small amount of water (to polish it), before washing it with abundant water. The Japan Sushi Association video also showed an astonishing step of not only soaking rice for 30 minutes, but also letting it dry in a sieve for 30 minutes. Combined with a good rice vinegar:sugar:salt "sauce" right after cooking and with the rice paddle "cutting" technique + fanning the rice to cool - I have arrived at the best rice ever, since first cooking sushi rice over 10 years ago.

I'm gonna be the first one to admit that I couldn't make rice properly before. It was either mushy or half-cooked, I once burnt it to the point where I almost had to throw the pot in the garbage. I literally told myself: I'll follow this guy's intructions and if it doesn't work out, I'll just buy a rice cooker. Let me tell you, I just made the perfect rice for the second time thanks to you! @@mintysingularity I really don't know how many kinds of rice they have in India, I know they predominantly use Basmati. And Basmati is the kind of rice you fluff. I live in the Phils and we have a wide variety of rice that varies on preparation. Amount of water, times you wash it, etc.

I cannot appreciate this video enough. I got a bag of fresh jasmine rice and I’ve been epically failing it. Batch after batch of barely edible rice. It’s either slightly undercooked and sticky, or very well done and falling apart. Or the top is cooked bottom undercooked, or bottom mushy top dry. Not me almost crying but totally me almost crying after, what? 20 failed tries. I saw this video. Put my hands together in prayer and followed your instructions. When done… I was thrilled to see it not only perfectly cooked but FRAGRANT as well. Oh the fragrance was enough to tell me this was a SUCCESS!! THANK YOU!!!!!

Thanks to you Adam I managed to make Afuri style Shio Ramen for 10 people (my family) two weeks ago. I have to admit, I never tasted (nor made obviously) ramen, but I knew from the beginning I would love it. This is actually very helpful for me. I always do the traditional British method. Step 1. Don't wash the rice. Just put it in a pan with a little bit of salt Step 2. Boil the kettle and pour the water over it. Doesn't matter how much Step 3. Boil on a medium-high heat for ~10 minutes Step 4. Take off the heat and drain into sieve Step 5. Let it rest for a minute in the sieve before fluffing a little Step 6. Serve Your way seems better lol. I should try yours.

One additional thing you can do is add a small piece of rinsed Kombu seaweed (Rinsed just enough to remove the surface salt) to the top of the water which will add a touch of umami flavoring to the rice while it cooks. Superb for sushi rice, and rice-based Japanese recipes.

This method is legit. I watched me do it just a few hours ago and it was my first time. I used Jasmine brown rice so I had to cook for 30min instead of 15. My rice turned out great. Just as good as my mom and dad's and they've been doing it way longer than me. Next time I wanna try it with the Japanese seaweed, sesame seed and salt seasoning.

We got given a Cockatoo brand rice cooker from Korea as a wedding gift. That was the most useful gift ever. I think it lasted about 8 years before the electronics stopped worlimg properly. Apparently if you're in Korea they have a lifetime warranty or it's a very long warranty at least. The rice is perfect everytime 👍👍👍

I just put 2 cups of boiling water to 1 cup of rice. Cover it and put it to minimal heat for 20 minutes. And thats it. Perfect cooked rice.

The feeling of holding a piping hot and full ceramic rice bowl with it's narrow base tapering to the wide rim, or a wide flat bottomed metallic one with shallow walls, and acute curves that's so hot you need a napkin to act as an impromptu oven mitt because you're too hungry to not nom nom, is one of the most comforting feelings that always hits me with a sense of nostalgia and the warmest memories of home cooking every time it happens. Done on a briskly cold day, and the feeling is only amplified to a level which seems to never fail at producing a smile upon my face. 잘 먹겠습니다~! 🤤

I have cooked rice quite a lot of times in my life, but have never quite got it perfect, until now! I followed Adam's way and my rice was near perfect. A little bit sticky, but mainly fluffy and just delicious. The only difference was that I used an ordinary (good quality) stainless steel saucepan.

I find it fascinating the difference about how rice is making in each culture. Here, in Brazil, rice and beans are our basis in any meal, but for us, it goes with garlic and sometimes even onions, and that's a basic white rice, but we can also do it with small beans, meat or vegetables.

When you mentioned "no Asian person has ever fluffed rice with a fork before" I had doubt. Well, actually when I was kid and our new home just built, we barely had anything in the house at that time. As an Asian, rice is a must but we didn't have rice cooker then, and decided to use pot on stove instead. My late grandma teach me how to do it and when the rice is ready, she asked me to take a fork to fluff the rice. Now, even when cooking rice with rice cooker, we will fluff the rice with wooden rice fork. Different people had different way.

This is the best rice cooking video ever. Only one thing I would change, don't use the middle finger to measure the water level. There are many fingers to choose from, my choice is the index. Thanks for posting.

OMG finally someone answered my question whether you put your finger on the bottom of the pot and fill it to the first knuckle or whether you put the finger on top of the rice then fill in with water until the first knuckle

I love going through your videos. Your energy is super soothing, and your recipes have really inspired me to tackle them. I just bought a stock pot and a whole mess of bones and chicken and I’m going to try making my first stock!

That's pretty much how I cook rice, except I usually am only making enough for 2 people. I use a smaller pot and once the water is boiling well, I turn it to the lowest setting of the stove and leave it there until the water is absorbed, then totally off until ready to serve. Perfect every time. Mu wife is always amazed that the rice comes out perfect with no scorching or burning. Every grain comes out of the pot.
