Your father is an absolute TREASURE! I'm so glad you're documenting his recipes, because authentic ethnic recipes are so hard to find explained CLEARLY by people that have been making them. I love that you're using subtitles so we receive all the knowledge your father is giving us without having to worry about language barriers. I had never heard about the boiling water trick even though I've been cooking scallops and other seafood for my entire life (New England family). I have always loved Asian cuisine, so to get these recipes and tips straight from a Master is a privilege!

I would say the same, but you beat me to it. Overlooked small details like this were the cause of accidents. Then when the damage is done, and regrettably can't turn back time. You can never be too careful with safety.

Thanks so very much for sharing your dad’s cooking skills and knowledge!! I tried the prawn recipe yesterday and it’s as good as from a Cantonese restaurant and that’s why I come back tonight for this scallop one… and it worked again! Your dad’s technique is so authentic, clever and yet effective. It means so much to us living overseas alone and missing the homely flavours!! Please pass my gratitude to master Lau!! ❤❤

Mui Mui is indeed really cute. However, I was constantly worried that she will get cut by the cleaver if she reaches out too far or get splatter burns especially during the wok stir fry, even though I was watching a prerecorded video. I guess it's just me being a father.

I personally have always preferred this dish with snow peas. The sweetness pairs great with the natural sweetness of the scallops.

Hi Lau's. Loving your dad's cooking and Thank you for sharing.. I couldn't help but notice Mui Mui in this video and my heart keeps skipping a beat when she tosses and flips over the baby chair.. I am sure she's strapped in but it was a scary few scenes.. Happy Birthday Mui Mui!!!

Awesome video. For pan frying scallops, especially for frozen scallops, they tend to become very watery and will not brown. How to avoid this?

Would it be possible to get a 蝦餃 and 豆腐花 recipe video in the future? I recently discovered this channel and it has really made me want to cook some of these which I enjoyed eating back home in Canada as a Cantonese Canadian who grew up in an area with many Chinese immigrants. I don't have the luxury of going out to a local restaurant to eat these anymore since I moved to Japan five years ago.

Super good dish! If you have access to good scallops, you can skip the boiling water and wine part since it'll ruin texture and make it really hard to get them dry enough for a nice browning. Only frozen scallops have that nasty smell usually

Actually to cut the asparagus more safely, can hold them with your flattened left hand, thumb tucked in, then cut at a 45 degree away from your left hand. Cut the length of the asparagus gradually from right to left. The left hand acts as a pulling force is actually easier than what Grandpa Lau showed us. Of course, work with a sharp knife and exercise caution at all times.

No, Mr.Lau is confident with his cooking skills. A skilled Chinese chef can do it without a drip of water out of the pot.😊 please consider again when cooking, 50 years in kitchen he is.

When buying scallops, ask if they are wet or dry scallops? Dry scallops fry up better, wet scallops will have additives added. Dry scallops usually are more fresh. Many times the person behind the counter won’t know the difference.
