The problem with these techniques is that punch from the left hand is likely to be a probing punch to trigger a block (and attention) while the real punch comes from the right hand.

Great point and that is definitely the case in many cases but these techniques are to be used against someone throwing a full jab, not a probing jab. These work especially well against karate fighters who put a lot of emphasis on long-range Jabs but I've also been using a lot of these for boxing and mma-style sparring as well. I'm really glad you made that point though because anybody reading this should definitely take into consideration that they need to know if the jab is real or just a fake

as fast as he would throw that punch , she would have to parry it just as quick to get her counter in.

True but fortunately the jab has to travel a few feet while the parry only needs to move a small amount. Works best if you can anticipate or bait the jab.
