In this video, I will show you my technique on how to crack an egg with one hand and then I show off a bit and crack two at the same time, one in each hand. It's a blast, you should try it!
Then I demonstrate how to separate the egg yolk from the egg whites using nothing more than my hands. It's really the best way to separate eggs with the least amount of time and breakage.
It is the fastest and best way to separate eggs, in my opinion, as I used to separate tons of eggs making chile rellenos when we had our restaurant.
Then my last tip is how to remove egg yolk or shell when a yolk breaks or a shell gets in your eggs.

That's interesting. I always crack my eggs on the side of a bowl and don't usually get any shells in my eggs! I did get a shell in the video but that was unusual for me. I think there are a lot of variable including the thickness of the shell. Give it a try and see what happens. At least you know the best way to get them out! Thanks!

Interesting, I'll try this in the morning. I was told to never crack on a bowl but on a counter or you'll get pieces of shell everytime.

Yup. 2019 here. I've gone down quite an egg preparation rabbit hole tonight in my quest for some specific info on Brie cheese. And I have to say those counters give it away that this is from 2013. This was still helpful for the yoke stuff. I guess I always thought the point of cracking eggs with one hand was to keep from getting any of it on your hands...oh well.

Which ever way you do it, one hand, or two hand, still NEVER crack an egg on a sharp, pointy surface. Using the edge of a bowl, or a frying pan will send up egg shell pieces all inside the egg. Always use a flat surface, like a countertop, or a table surface to crack an egg. That way, you'll create a big single crack in the egg, and only a few minuscule particles. Also, you don't force the minor particles right into the egg white. Other than that, this is quite nice advice.

***** I guess I'm kind of stubborn. I crack my eggs on the side of a bowl all the time and do not get shells in the eggs. Amazing I know! I've cracked a lot of eggs in my day making chile rellenos in our restaurant and never had a problem. Yes I had a few shells once in a while but not on every egg or even a dozen. Use what ever technique that works for you! Have a great day!

The reason why many ppl say you should not crack eggs at the side of the bowl is because by cracking it at the side of the bowl, it could push the egg shell into the egg itself. if you do it on a flat surface, the egg shell cracks without goin in. still, i crack my eggs at the side of the bowl and i hardly get any shell. great video. i am subscribing.

I crack my eggsRAW OR BOILED by cracking the WIDE BOTTOM of the egg which is where the AIR CHAMBER IS located, remove protective skin and VOILA, then pour out content or peel easily.

Another tip is besides using the egg shell to get some egg shell out of the yolk or egg whites just wet the tip of your finger and then just touch the shell piece with your finger and just drag it out.

DONT USE THE EGG SHELL TO TAKE OUT THE PIECES OF SHELL. Egg shells are very dirt easy way to get salmonella or something like that.

Rockin Robin's Cooking Mexican Recipes I've seen it too. I'd rather pour it into my hand than mess around with a bottle I'll have to wash. It's not like I separate 60 dozen yolks at a time. 4 at most. The time I save not washing a bottle offsets any "time saving" it might create.

I just watched four tutorials for cracking eggs…to determine best way..on flat surface or edge of a bowl. It was actually divided. It’s almost personal preference. Some think against the bowl can force shell into the egg. So I’ll just keep trying what’s best for me. 😃🥚

I don't crack it on the edge because I don't want the egg shell to sink into my whites, so I'd rather crack it on a table or the inside of the bowl

Using egg shells to get the little pieces out?. I'm sorry, I don't know how u get clean eggs mam but I have literarly seen eggs with chicken shit sticking to it!. Cooking kills microbes, but I don't think I like chicken shit anyways. Even if the shell is washed, it will only spread the deadly bacteria. (Not saying u shouldn't wash in such a case).

This is handy. But if you want a no mess and no pieces of shell method, then the knife and two hands method works best.

As far as I know because of the bacteria holding on the back of the shell, collecting shell pieces with fork is better. What do you think?

There is no solution to ocd. Germs are everywhere. On you, in you, name it. Stop being so fastidious. Once cooked all germs are eliminated. Oh and by the way not all germs can be eliminated even after heating.

I read that when a hen lays an egg, the shell of the egg gathers lots of bacteria during the passage out of her body. Hence try not to let the egg white or egg yolk touch the egg-shell exterior when cracking the egg.

I thought i'd share a tip of my own, since am grateful for the tips in the clip: Please people, never seperate the yolks from egg whites if you are simply goin to cook eggs/omelette to eat. All the latest scientific research shows dietary cholesterol DOES NOT elevate cholesterol levels. There is no real research/study that says otherwise. More importantly, all the good stufs in the yolk (including the cholesterol, which in fact, some evidence is now showing people with higher cholesterol live longer), and you want a balanced profile of micro-nutrients (amino and fatty acids) when u eat protein. Its abundant in stuf lyk choline; essential for a healthy brain. do a simple search on dietary cholesterol and blood cholesterol if you do not believe me, this is a common myth that has been perpetuuated by the complex (corrupt) American food industry. The science that implied this decades ago was back when the existence of good HDL cholesterol was not even known.

+thetruest Separation is needed in some cakes, as you beat the egg whites to get a fluffy batter. You are wright about cholesterol...Egg yolks are very good as a source of food. But raw egg whites contain an enzyme that destroys the beneficial proteins in the egg yolk. So when you eat an egg, the egg white must be fully cooked (in boiled eggs or sunny side ups).

I'M SO HAPPY! I got it on my fourth try and afterword correctly three times straight! Plus I used the shell pick-up method on the last successful one and that worked great. Somehow it's also cleaner than before, since during my whole practice there was only in total that one teeny bit of shell one could barely see and I scooped it up as soon as I saw it. (I use brown eggs to help me spot them li'l'uns.) Crap, I didn't mean to brag but to commend your simple online training. Thank you! ^.^

3:13 a better way to do it is crack it in a plate and use a bottle to get the yolk, i saw that in a video by someone else, I won't tell you who cause that would be advertising

So wrong, in at least two significant ways. 1. Never crack an egg on the edge of a bowl, pan or other sharp edge....you push small pieces of the shell into the egg and therefore into your bowl or pan. 2. Never get the egg on your fingers....likely your fingers are not clean and likely you will not thoroughly clean your hands after the egg whites run across your fingers. Very sloppy....very poor demonstration.

I wouldn't know how often you've cooked with eggs but, pardon me, it seems as though you haven't. The membrane along the shell between the innards tends to cling and the shell usually doesn't get into the egg if you crack to break straight through that membrane. Also, the complaint regarding the fingers is very silly. -_-
