I just purchased my first cazuela de barro , yesterday and I’m curing it with garlic. I’m following your instructions. And I’ll be ready to cook my first pot of beans! Tomorrow. Thank you.

you can buy lead testing strips to find out if your dishes contain lead. If it does and the lead is on the inside of the dish where food touches certainly discard it because no amount of boiling and "curing" washes a way lead. The issue is lead is baked into some pottery glazes. When you use the dishes you naturally chip and scrape small, even microscopic pieces and they end up in your food. When you "cure" the dish it doesn't soak into the actual glaze and remove the lead. The part of the clay that isn't glossy is actually unglazed , the unglazed clays usually don't contain any lead. It is so much better to use test strips and if you believe the curing method works use test strips before and after you cure it and see the results.

You are correct about everything i was thinking how about sanding that glaze off till the bare clay shows up?....🤔

@@MilenaKoncar not a good idea to sand off the clay. Try the lead testing strips. I’ve found that’s soaking the beans overnight with a tablespoon of salt and then rinsing very well and maybe doing a second soak for four more hours helps immensely in cooking them in the electric or stovetop pressure cooker. I cook the beans in the pressure cooker now to remove all lectins. I soak the beans now to remove all gas making factors from the beans. I’ve stopped using my clay bean pot.

I have been using clay pots for a while never knew about lead. I have new pot just got it from Mexico I am going to season it with garlic. Thanks a lot

@@RM-xq4rfall clay pots don’t have lead. It’s best to buy them that don’t contain lead. I like buying from companies that do 3rd party testing to ensure they’re products are lead-free. Lead is no joke. I buy earthenware clay pots as a non-toxic alternative to prevent lead, cadmium, and many other toxins but not all are created equally.

The cal method is for cooking without liquids, such as a clay comal. Where the comal never gets wet and the cal forms a non-stick barrier that just needs period "reseasoning". Your cookware is gorgeous!

​@Leez you can also find them at Mexican stores in your area, or even ask them at these stores if they have access to ordering them for you. Just make sure they are usable. Some are just for decoration.

Thank you , you were so informative. I purchased 2 pots in New Mexico. I followed your directions to the T. When i threw the water so i could rinse them the water was black would you know why? Then i noticed that the bottom half of the pot came off it is not leaking but a thin layer of the clay came off .what to do.

Thanks for the video. I purchased a clay pot and followed the curing steps. The water never reached the full boiling point but the water did evaporate more than half way. So my question is this, even though there was never a rolling boil, is this pot safe to use? Thanks for the advice

I found a few on Amazon, but I personally prefer to see them and touch them before buying. And to see if the lids fit properly. Try Mexican pottery stores or local swap meets.

For smaller pieces like the jarritos, I boil them in a large pot with water and garlic or a combination of milk and water.

what is the difference between curing it with Kal and with garlic as shown on the video? I've seen other videos and they use a mix of kal and salt.

How do you repair a small crack in a shallow clay pot. I just bought and cured it, now it has a hairline crack. It's has a stamp of being lead free btw.BTW. my bigger clay pot I strictly use for beans, nothing else. The shallow one I use for chicken mole. I'm afraid it might bust as soon as it gets hot.

Yes, just not a hot oven. Put it in when the oven is pre heating to avoid drastic temp change.

After doing the curing process I let it dry and past my hand through the inside glazed part and if I look super closely I see little shiny particles is that normal ?

Do I need to do that for like soup bowls on there all glazed I've been using them but I didn't know that if I had to treat him or not for lead should I use baking soda the same way but like I said these are these are bowls you eat out of not cooking pots and for drinking mugs I have some I just bought them too and I used them a couple times I just washed them and use them should I treat them for lead

If they are not glazed, they are just for decoration.

The ceramic glazes in Mexican pottery is 90-95% lead. You cannot get it out by "curing". It is against Mexican law to use glazes with lead, but the government does not check any production. The glaze with lead is the cheapest so this is why the potters have not stopped using it. Your choice.

Being in Japan they are probably hard to come by. I would not know if it can be fixed. I would Google it.

I really dont believe that this will kill the lead and other chemicals that glaze has. Do you think its a better idea to sand the whole glaze off till the bare clay shows up? And then cure the bare clay?

We forgot to cure it and after cooking it there was metallic shine to the lid and inner pot. Is that the lead? Can we cure it now or is it too late?

I cured mine with garlic but I noticed when I boiled something the lid and the outer rim of the pot had a silver lining. Is that lead? 😳

It's more likely from the water and garlic, but to be safe boil again with equal amount of water and milk

The one in the video is the same one I use to make my beans de holla and it never tastes like garlic.

Kylie C_ Do Not Make Coffee in your lead pot!!! Get a lead testing kit and test your pot first...coffee is an everyday drink for some people many times a day. Ingesting lead can cause serious health issues.
