Did you know that you have to cure your mortar and pestle? If you don't want pieces of rock and dust in your salsa or guacamole, then, you really need to make sure to wash and cure your molcajete as well as both sides of your tejalote. Don't worry though, it is not hard to do & in this video, I will show you the Mexican technique for curing your molcajete or como curar un molcajete. Making a salsa for the first time in your molcajete will season it. So, there is no need to worry too much about taking that extra step. I was pretty impressed with this mortar & pestle. It is a nice and heavy granite that is very smooth in finish.
Here is a link if you are interested in purchasing a molcajete:

I think this is a 6" but I have an 8", I couldn't find it in stock.

Brilliant. I literally got this exact make of mortar and pestle for Christmas. I also found it was pretty smoothly without "seasoning" it. D OMG! That’s insane! Well, if it’s any consolation, mine is made in China 😔 I didn’t even realize that until someone in the comments told me. Nice video! I went back and forth about getting a lava rock vs granite and ordered the Amantoli lava rock just to be "authentic". Then I saw your video and wished I had gotten this one. Well, when the lava rock one came in, one leg was broken and I could tell it was packed that way because it was tightly wrapped and yet the leg was between the other two legs. Well that was a blessing in disguise and I'm returning the Amantoli and buying the IMUSA one just like yours. No one will know that the guacamole they're eating wasn't made in a lava rock molcajete... hahahahaha! I'm so glad you gave an endorsement on this one; I like the tejalote shape and I'll still season/cure it just as you advise. Good vid, I feel better now!! :)
@VanzHumbleHome
@VanzHumbleHome Жыл бұрын
That’s a bummer to hear about it being broken! But, blessing in disguise 🥸 I always have the same kind of thoughts about being authentic 😅 plenty times I just put my salsa from the blender into my mocajete😜 it’s my authentic. It will always be wrong in someone’s eyes 👀 I’m not worried about all that tho. Still tastes good 😊 I glad you are happier with the affordable one! Works just as good imo.

@@VanzHumbleHome thanx for the vote of assurance! I also took my grinder and reshaped the tejolote because it was kinda bulky, so it's now more hourglass shaped like the traditional one. I left one end/tip rounded and the other one I ground a flat spot so I have option to use flat or round. Took about an hour and took off about half a lb of weight...it now weighs just over a pound....much lighter than it was...and I lift weights! hahahahahahaha oh yeah, I still seasoned it about 3 cycles with rice and salt. Anyways, thanx again!!!
@VanzHumbleHome

@@nateroo Haha, yeah, the tejoloete is pretty bulky and heavy. How did you grind it down? Very cool that you have a new shape.
@nateroo
@nateroo Жыл бұрын
@@VanzHumbleHome I used an angle grinder with a masonry grinding disc (from home depot or lowe's); I would lock the tejolote in a vise and grind down the sides of each "ball", then rotate it in the vise and just keep doing this til I had the shape, which is kinda like a bow tie. On one end of the tejolote, I grinded a flat face and I left the other end rounded so I could have the option of mashing with either flat or round face of the tejolote. Just made some salsa with it and used the flat side mostly. Having the flat side has a corner edge to it when you want to "cut" some of the ingredients while mashing, like big chunks of anaheim peppers.

hey, would you say it was appropriate to use seeds in part of the curing or seasoning process? I have some dried seeds for sprouting - adzuki, mung, lentil - and wondering if they would be an interesting alternative to rice (I've done 2 passes w rice and ran out). Whether thats dry rice, dry rice w a bit of water, or them soaked in water for some time, OR used alongside garlic and peppers when you season it. Obviously no problem getting more rice, but was curious! thanks again

I just use a scrub brush and rinse it out with water. I generally don't use soaps in it. Sometimes just letting it soak for a while and then scrubbing it will get any dried stuff off. You can use soap if you want. It wont hurt it in any way, but I feel like it doesn't need it.

Out of the same stone, consider making a crucible. Then coat the inside with the over 3 thousand degree furnace cement... Heat treat the furnace cement in a SEPARATE oven not used for food. Unless you want to die a miserable death. You will have a crucible that can be used many times before having to buy a new one. Crucibles are much more expensive than a motar and pestle... You'll get more money for your work.

that's not a molcajete, that's a granite mortar. it even says so on the box! molcajete are made from a particular sort basalt with a vesicular texture (bubbles), that make it rougher most well suited to mushing and grinding up fibrous materials, but it wouldnt withstand pounding for long. as opposed to the more narrow and tall thai style granite mortar and pestle, that are more well suited to pounding and crushing. with such a big, wide bowl and pestle, you can very much use this one like a molcajete. and it sure wont make the salsa come out worse. :D not hating, just geeking out a bit.
