Merry Christmas from one butcher to another! I’ve been in the meat business 8 years (April 2024). Even though I haven’t been in the meat business as long as some others, I can tell you that making a family holiday easier brings me joy. Being told that a family’s holiday was a success, because of the ‘behind the scenes’ work (so to speak) that a butcher shop provided makes our job worth it. Happy Holidays!

I just bought my first Standing Rib Roast. I've watched many. many youtubes of y'all... You guys have taught me a lot. Thank you BBs, Anyway, I'm giving Ribeye steaks to my friends as Christmas presents (we're all over 70 0r high mileage - broke/poor) and it's good to get great steaks, ( I got a $352 20.5lb full/7 rib for $144 on sale).Thank you for the education and "how to"... My prime has come a long way over the years. My kids and grandkids have requested it again for Christmas eve. Guppy's hot tip... season it up then slather it in stone ground mustard before you cook it. The Angels will sing.

Just bought a 17 pound Prime Grade boneless prime rib roast from Costco and will divide in two roasts so adults can have a rare slices, and the other cooked to Medium for the young kids. Going to Academy to pick up some rub. Excellent timing and episode.. thanks! As for favorite Christmas movie(s) I’m with Stacy, Home Alone 1 and Elf. Merry Christmas from New Orleans

In are area (Orange County, CA) this time of year even the standard supermarkets remove and then tie back on the bones. Often they will cut the bones about 3/4 off so you are left with them as a flap. I usually will pull them back, lightly salt the underside of the meat and then tie the bones back on. That way the bones get some of that salt as well.

Wonderful. I just got myself a beef three-rib (fore-rib) standing roast for Christmas. Bone in, but chined. Couldn't get more English if you tried. Plus 7lbs of boneless rib-eye steaks to fill in the rest of the holidays. Merry Christmas and best wishes from England.

Thank you BB. Trimming and seasoning my roast while listening to this. Kept me sane as this will only be my second ever PRR. Mostly off the bone, seasoned, tied and letting it rest overnight in the fridge on a rack over Himalayan sea salt. Then in the convection oven tomorrow. Happy New Year. 🎉

You guys are awesome! Thankfully, I talk about you enough because my girlfriend bought me the 6in victorinox off you guys and gave it to me as an early christmas present. I love it!! That being said, I raise my own steers at my house. I just processed my sixth so far, selling to my friends and family. All grainfed Angus X. Can you put out a video on what makes a steer ready for process/choice vs Prime? My boys are typically 650-750 hanging weight and its just hard to tell being new and all. Keep it up!!!!

Always interesting to see how other Butchers work, here in Scotland i cut a max of six ribs for all my rib joints, and whilst you remove the ribs and roll them back on (13 min) we leave the rib bones on and saw the spine sheet loose and roll that back on to keep the meat moist leaving the customer to carve. So far i have 17 2-3 bone in rib roast on the order sheet, a bit down on last year, oddly point of rump is popular this year with 22 ordered (normally 5 at most, probably some TV chef to blame). Goose sales have floored after a price jump (£100 for an 8 lb goose) bird flu wiped out a lot of producers, turkey sales are steady but most are boneless joints instead of full birds these days. Will it be a bumper year........probably not, but steak pie sales for New Year are always a seller in Scotland, so should struggle on another year.

The best prime rib you will EVER have is a 109A cut. Peel back the fat cap, reserve. Trim the fat and silverskin. Season to your hearts content, salt, pepper, garlic, rosemary. TIE FAT CAP BACK ON over the seasoning. Roast on rack with drip tray. At about 120f probe or one hour before finishing, cut strings, remove CAP. Gain the nice crust, while further rendering any remaining fat on/near surface. The fat cap renders during this process and as it melts the juices AND seasonings are washed into the meat. Make your au jus stove top after removing the roast from the pan and you will be nicely rewarded.

Pro tip, tie up all rib roasts. Even the boneless version because it brings the slab into a more cylindrical shape and cooks more evenly.

Over here in Australia we(Supermarkets) used to call a 4 Rib Roast a "Prime Rib Roast" but these days it's just a Rib Roast, or as Singular(Bone in) is OP Rib Steak. For the whole thing(no Bones) is called Rib Fillet(same goes for Eye Fillet). The Chuck(Blade end) is my favourite (especially the Spinalis)

How about a Brontisarus steak. I've been using my local store, Mar Val and buying prime rib right after Christmas. It gives us 8 or 9 meals when I cut it in to steaks. Beautiful job guys. That Prime Rib here is $195 for a 7 bone in any store. I make Tomahawk steaks out of them and use the rest for taco's. One steak feeds the family! Thanks guys!

I always season between the meat and bone before tying it back up, but I keep it simple with salt, pepper, and a couple sprigs of rosemary. Definitely the best way to do a prime rib is to season it all the way around. I have to say, though, I'm disappointed that nobody showed Die Hard any love. Do you not believe it's a Christmas movie in Ohio?

Seth another "Hot Tip" is to use a Binder(can be anything from Mustard, Mayo or even Water) to help catch/set all your Seasoning!

That last joint would be nice to roast by leaving fat cap on, removing paddy wack and bones then putting bones back on joint and stringing it up, That's what I do with UK 4 rib of beef primal cuts. 👍👌 UK butcher 3rd Gen from 1985 to date my Great Great Grandpa started in 1861 his own shop.
