Have you ever cooked with fresh beets? Also known as beetroot, this root vegetable comes in a variety of vibrant colors, from deep red to golden yellow. It's like nature's way of saying, "Hey, let's add some pizzazz to the veggie aisle!"
Beets are also full of vitamins, nutrients and antioxidants, making them a great way to eat your veggies in every color. Some say beets taste a little too earthy, but roasting them in the oven helps bring out their natural sweetness, making them kind of like a “vegetable candy” 😋
In this video, Brand Ambassador Justin Grimm shows us how to use the F.N. Sharp Chef’s Knife and the handy little paring knife to cut and prepare fresh beetroot for roasted beets with a side of creamy dip made with Greek yogurt and feta cheese 😋

Beets ‘n’ Feta Dip Recipe Ingredients:
🔪 1 lb beets
🔪 3 tbsp olive oil, divided
🔪 Salt and pepper, to taste
🔪 1 garlic clove, finely minced
🔪 6-8 oz feta cheese, in brine
🔪 6-8 oz Greek yogurt
🔪 2 tbsp pistachios, crushed
Recipe Instructions:
1. Start by trimming off the stems of each beet. Reserve greens for garnish, a salad, etc.
2. Preheat your oven to 375℉.
3. Wash your beets, and/or scrub the skins. Optional: Peel the beets raw or wait until they are roasted. If roasting first, leave the beets whole.
4. Slice off the root ends and tops of each beet.
5. Cut your beets into your preferred cut. For this, small wedges are great!
6. On a foil lined baking sheet, spread out your beets evenly. Season to taste and drizzle with about 2 tbsp of olive oil (enough to coat them).
7. Roast in the oven for 30-40min if cut, 40-60 min if whole.
8. Allow the beets to cool off while preparing the feta dip.
9. In a small food processor, add the feta cheese and yogurt (and garlic if using).
10. Chop, then puree until mostly smooth.
11. Add about 1 tablespoon of olive oil and puree until smooth.
12. Plate by placing a good sized dollop of yogurt off towards the side of your plate vs. the middle. Using the back of a spoon, push away from where you placed the dollop to make a smear across the plate.
13. Place beet wedges here and there, thoughtfully.
14. Garnish with a beet green, if desired.
15. Sprinkle with pistachios - so it’s pleasing to the eye.
16. Drizzle a little olive oil over the dish.
17. Enjoy!
