The words "deep fried" often evoke thoughts of weight gain and clogged arteries. But Amanda Cohen of NYC's Dirt Candy is here to show you otherwise-she shows us some of her favorite recipes for deep-frying veggies and proves that they can be surprisingly healthy. Don't be too worried, though-she also shows us how to deep-fry a candy bar, so not all of the fatty fun of deep-frying is lost.

A lot of you guys *really* don't know much about the diversification of cuisines. It's quite traditional for a number of Asian cultures to deep-fry their vegetables (predominately Thai & Indian). This isn't an American thing *at all*.

Sweet recipes, love your creativity in cooking! I once had Tempura deep fried Veggis at a Club when I was Young and my favorite was the Julian cut Carrot strips. So sweet and tender crunchy! Thanks for sharing you have inspired me to make these recipes!

The first chip shop to batter a mars bar was in Scotland, yes, but I wouldn't really say it's a "scottish" thing, since shortly after it became a mainstream thing to do across the country.

She's totally right about most of her health advice on the deep frying although missed out on the part about acrylamides. Oh well no one is perfect but yeah browning your food basically gives you small doses of carcinogens. Not that I'd really worry about that personally but it's notable effect that deep frying offers that other options don't quite as much.

Matthew Spear for deep frying, oils with a high smoking point are preferred. you can't use olive oil, since it will start to smoke and turn very bitter at typical deep frying temperatures. sunflower oil or rapeseed oil are pretty common for deep frying.

That was painful to watch. She is like one of my old sous-chef. Never actually learned how to cook, doesn't know how to use any kitchen tool, and is the dirtiest person in the kitchen all the time.
