Hello Olivia! Thank you so much, it really means a lot :) That's a great question. The ultimate watercolor brushes are the most popular, but I think it's partly because none of the brushes included in the basic Procreate set come close to imitating real watercolor properly. With some patience, time and skill you could, however, use the basic default Procreate brushes to mimic gouache a bit more easily than you could mimic watercolor. That being said, follow your heart. Most tutorials on this channel are meant to be used as a starting point and can be followed using a wide variety of brushes, depending on the effect desired. Sorry for the long answer, hope it helped!
