Just want to say a massive Thankyou Gemma .. I have managed to make a 4 layer sponge cake and iced it with your famous buttercream and finished it off with a choc ganache drip .. it looks amazing and my whole family are shocked to the core .., I couldn’t of done any of it without watching your amazing videos ! Really good request! Usually a regular buttercream batch makes way more for 12 standard cupcakes or even a 2 inch cake. And you cant really save it for quite long or just eat with a spoon like pudding!! Often I find baffled how much to use for a 4 layer cake or a bigger 10 inch cake.

Thank you so much for this! I made a 2 tier Ferrero rocher cake yesterday and attempted a drip but it went terribly, my chocolate drips melted the buttercream, and were way to thick so they didn’t drip they were also pretty lumpy and now I see that I overheated it, I’m trying this today on the cake and hopefully it goes a lot better. Thanks for these tips!

just used this ganache recipe. was a good starting point but had to add loads more cream to make it runny. Tip for anyone with leftover ganache put it in a mug and add milk microwave until hot add a bit of sugar if u like and you have some yummy homemade hot chocolate. so good. Try it sometime

O my Lord everything that could go wrong did go wrong..my ganache was too thick, the top shot off my squeeze bottle mid drip spilling ganache all down the sides..hot humid day in sunny Aus so buttercream softened really quickly.. crappy turntable got stuck, crooked and wobbly (note to self don't scrimp on key baking equipment) but I have learnt lot of repair tricks from you guys so persevered and got a "good enough" first effort to give to my newly wed neighbours as a wedding celebration cake..looked very home baked, but I learnt a lot..thanks Jemma

For anyone who needs the measurements in cups if you buy 8oz a chocolate use 1 cup of heavy cream. As 8oz equals to 1 cups. Hope this helps! Great video this was really helpful and worked well when I tried it! :)

Lovely drips, milady! Just curious if after the top ganache has settled in the fridge, does it smooth out completely, making it look glassy or is there another technique that you would use for that? Hi - I love you videos! I have used the white choc drip recipe a couple of times. The drip is perfect consistency but I am finding that it goes very hard when it sets up so if I put it all over the top as well it can crack when cutting the cake rather than cutting through nicely. What would make that happen please? I’ve followed the recipe exactly but I wondered if the quality of cocoa butter would make a difference? (I use the suoerwhite powder too. Would appreciate any advice please. Thanks so much x
