In this short video Dr. Grant Woods shares the way he cuts up a deer to easily process venison at home. After many years and hundreds (perhaps even thousands) of deer, he has learned the best, most effective way to remove the meat. Watch this video for suggestions on what type of knife to use, where to cut for easily removing meat, what not to include for better tasting meat along with many more useful tips. This video simply shows how to remove the larger cuts of meat. To record and show the removal of the rest of the meat would have been tedious and boring to watch. Please, if you are processing your own deer, take the time to remove the remaining meat which can be used to make burger, summer sausage, jerky, stew meat, etc.

I'm in the same situation, killed my first deer (a doe) 2 years ago and haven't gotten another since. As I type this I'm getting ready to go hunting with a friend and his dad on an apprentice hunting license, the main thing is just talk to other outdoors men and women, if they really enjoy the outdoors, they will want to pass on as much information to you because they want to see it continued! it did, much easier than anticipated. I hung it by the neck. next time I'll hang by neck to skin it then but the gambrel in it hind legs and lift that while lowering the head till it's upside down to butcher. I like skinning with head up because the hair is going down and that the way the skin is pulled this way. maybe just me but I think it helps with keeping hair off the meat. my wife gets really skeeved when hair on it and this way I barely got any at all. good luck to you!

Wanted to say thank you so much for posting this video . I am a beginning Prepper and have not been able to get into hunting yet since leaving the military 3 years ago. Mostly apprehensive about hunting as I am a small man. So physical things I am decent at doing, but require more effort from me. Never been taught to hunt medium size game such as deer. My major apprehension has been to not kill anything that I could not haul away, skin, prepare, cook all by myself. Good filming & explanation.

I love watching this video every fall. I used to quarter and cook in big roasts until I saw this. First time I tried this it probably tripled the amount of meals I got and cut the waste from uneaten leftovers from way too much meat cooked at once in half! I've watched a bunch of videos and yours is by far the best! Dont ever remove this video, if you do I need a digital copy!

Hubby was out of town, and our neighbor dropped off a deer for us leaving my teenage daughter and me to figure how how to process it from there. (Hubby usually does this part, and we just tackle grinding and packaging meat inside.) Your video was a huge help as we sought to navigate the process and add a new skill to our repertoire. Bagged a nice red hind last night and needed to break it down quick since it is middle of summer. This vid was the best guide by far! No mucking around, exactly what I needed to know on the fly. Basically how I do it. I remove the ball roast, then move to the rear of the ham and remove the muscle group as a whole. I separate the different roasts after I let it age and remove the gland at the same time. It all has the same result in the end. Thanks for posting another great video.

Sir, I don't know where exactly you hail from. But you sound like a Southern gentleman who knows his stuff...minus all of the extra stuff. And for that I am thankful. This video is direct, effective and presented in a friendly yet knowledgeable tone that helps a lot of people learn...like country northern boys like me. Lol!. Too folks want to put on airs cause they're in the public eye (especially when on KZbin), they want more "hits", or they think a flashy style beats substance. But at the end of the day, good old common sense, common tactics with common tools always reign supreme cause...they work! Good job. I'll be watching your channel.

Thanks for taking the time to record this for us. I can field dress my Game, but for the most part, have never attempted to butcher my own. I believe that I will give it a go now. The steps are very simple to follow, so as long as you take your time, not much sense in paying your Butcher to process it for you. I do my own sausage and jerky so that helps. And regarding the antlers, there are Artists that will carve the Antler, or use it in some other fashion. If the base of the antler, and the points happen to be thick enuff in diameter, Cue Makers will also use them for Butt Caps and Joint Collars in making Custom Pool Cues. The coloration and grain lines can be very unique once turned round and the inside exposed. So, even if yer not a Trophy Hunter, which I am absolutely not, you can sell the antlers for a little. Buy you a box of shells or 2 for next year, or maybe a couple of boxes of beer to enjoy while Bar B Cueing that great wild game. Even if you're not a hunter, and just enjoy camping and hiking, if you come across fresh antler sheds, take em home with you if you can.

it is quite awesome but that is a very important part of flavoring for a large steak from that spot. just depends what you prefer to do with the meat.

Thanks for the video! I have used this twice now for myself. Total time including pre work/gutting and trimming/bagging/cleanup was about three hours. It's very fulfilling to be able to do the complete process on your own. I really love the method used on the upper hind leg sections, perfect for bagging some good roast which is what we use it for mostly.

Been paying $80/deer ... 3 times so far this season ... # 4 I'll do myself. This instruction seems to be the most clear I've seen .. and photographed well and narrated well. ... Now into the garage to start with the hind legs .. Will be glad to get it done as I've been losing sleep keeping that wood stove going enough to keep the temperature between 32 and forty.

That "hidden tenderloin" is the eye of round. i believe in order as shown in the video the cuts were "sirloin tip", "bottom round", "eye of round", "top round". in regards to the ham. Great video this was very educational!

Jonathan, I’m very confident you can deer hunt and process the meat! Some states allow quartering the deer before removing it from the field. This would mean reducing the load significantly. I’m not a big guy either. I often have a friend help me drag the deer to the truck.

This is the video I first discovered that made me want to start processing my own deer. No more processing plants for me. All myself now. Over the years I've gotten good at it. That ball roast is a sirloin tip. The rump roast is a top round. The hidden tenderloin is an eye of round. And the next roast is a bottom round.

I've removed the lymph node and notice a big change. Including over night gut kill. All infections go to this, I think it's safe to hear the wildlife biologist on this. Merry Christmas to all.

Seeing the way you separated the muscle groups was fascinating as opposed to some other videos that I've watched where they weren't very smart with where they guided their knife. All of these cuts of meat look fantastic! I can't wait to head out this fall to get my first deer during bow season!

This has got to be one the best DIY videos on how to process your deer. The process was fast even though he took his time doing it. I'm one of those hack it, grind it, and stuff it processors, but after watching this I think I'll start doing a better job, especially after seeing that whole lymph node removal, YUCK!!!! We use the smaller cuts of meat to go in the grinder for burger. We focused this video on removing the larger cuts. Removing all the meat would get a little boring on video! Thanks for watching! Thanks for the great tips, Grant! This is one of the best deer processing videos I've ever seen! I must admit, I've always removed each hind-quarter, & worked with it separately, on my stainless steel cutting table. The "ball roast" is one of my favorite cuts, aside from the obvious. Its basically a sirloin tip from a beef. I slice mine 3/4 - 1" and grill on the good ol Weber. You get about 5 or 6 per side and they are awesome if cooked just like any lean steak should be. Great video, well done.

Excellent! Thank you for your professionalism, passion and faith. I would indeed like to see a video (by yourself, of course) on field dressing a deer . It is not one of my strong suits I always seem to botch the removal of the Vent and urinary system. To cut the pelvis? Use one of those special tools?, Etc. Thanks again. JB

Grant, Thanks for the video. I have used this step by step video on each of my two does the previous two years. It is very helpful. I know you have mentioned in your previous videos that you do not field dress the animal in the field, and you prefer to start the skinning and gutting process while hanging up. Do you have step by step video of the skinning/gutting portion that would take place before this video starts? The past two years I seem to spend more time trying to skin the deer rather than quartering the meat off, and I believe a step by step video would help me complete this more effectively and easily. Thanks for your help!

continued.....remove the connective tissue and glands. Often times we put the meat into the cooler on ice if we are unable to further process it right away. A good bit of" bleeding out" occurs during this process. We use a vacuum sealer and there is no freezer burn, etc. Thanks for watching! - Grant, Tracy, & The GrowingDeer.tv team

Start the skinning process on the ground and start closer to the hoof on the hind legs, this prevents additional hair from getting on the meat. Start closer to the hoof on the front legs also. Split the lower joint and snap the leg. It can then easily be removed by a quick slice. You should have the head and skin all the way off before you start removing meat. If you arent taking a neck roast continue with your backstrap all the way to the end of the neck, separate it later.

This is awesome. I’ve always either had my deer processed or like he said just hacked meat off. Now that I’m getting back into it and am older I want to be as responsible as possible when it comes to harvesting and butchering my deer.

I don’t “bleed” deer before removing the meat. I simple eviscerate, remove the pelt, and then remove the meat. The biggest factor to have great tasting venison (besides Ms. Tracy’s recipes) is to remove the meat as shown in the video and then
