You definitely eat the body!!! And clean that tail. The tamale is soooo good. U might even get the luxury of the roe.

Nice. Hadn't seen that tail-squishing technique. And the broth from the head is not to be overlooked -- it's the key base of Tom Yum and Tom Ka soups, and others of course. Makes an absolutely extraordinary stock. Even with the weird green bits. All you do is cook it in some oil for a few minutes and then add water, simmer that baby for a good half hour with aromatics? Oh yeah.
