Today I will be sharing how to eat for $1 to $1.25 a day (depending on prices in your area) This is a twist on the Extreme Grocery Budget Meals Challenge. I will be showing you how to eat for $1.25 or less for 1 day a single person. As with all of my budget meals I am assuming you have seasonings and cooking oil and most basic common condiments. This is specifically for a extreme budget. If you are in need and cannot afford a budget this low or even to supplement a grocery budget this low please be sure to reach out to local resources in your area for assistance. No one should ever go to bed hungry.
Please remember all of the budget meals I share are super quick and easy and can be adjusted to fit any items that you may have on hand to supplement any of these recipes. The items and measurement will be included below and well as throughout the the video. I will also breakdown the price of each meal in the video.
These meals also make for amazing pantry challenge meals if you are looking to save money, stretch your grocery budget or maybe you're in a no spend /no waste month.

SHOPPING LIST (Walmart)
1- Roma Tomato 20 Cals
1- Banana 105 Cal
1- 7.05 Cal Pasta 210 Cals per serving (3.5 servings) 735 Cals total
1- Half Dozen Eggs 78 Cals per Egg (468 Cals total)
NOTE: Cooking Oil is optional water can be used. But if you use oil (I used about 6 Tbsp. total) 120 Cals per Tbsp. = 720 Cals
TOTAL CALORIES as prepared: 2,048
BANANA PANCAKE
1 Banana
2 Eggs (use 1 egg if you want a thicker pancake)
SCRAMBLED EGG
1 Beaten Egg (or 2 beaten eggs if you only used 1 for the pancake)
PASTA PANCAKE
1/2 Pack of Pasta
2 Cups of Water (add a little more if needed)
1/3 of the Tomato (Diced)
1 Egg
Italian Seasoning to taste
Black Pepper to taste
2 Tsp of Grated Parmesan (optional and only if on hand)
NOTES:
**Add an additional 5 minutes of cooking time than the package suggests & do not drain.
** For the best results: Refrigerate the pasta for at least 2 hours (overnight if possible; the longer the better)
PASTA MEAL:
1/2 Pack of the Pasta (cooked per package instructions) KEEP PASTA WATER
2/3 of the Tomato (Diced)
2 Cup Water (Preferably Pasta Water)
2 Eggs
1 Tbsp. Ketchup
1 Tsp Complete Seasoning
Italian Seasoning to Taste

My dad was so poor after he came out of the army in 1945 that he only had a few cents to eat. He would go to a restaurant and order hot tea with the teabag on the side. In those days you could ask for stale bread. He would use the ketchup on the table to make tomato soup and eat some stale bread. He saved the tea bag for later. He would approve of your frugal meals because he would not starve that way. Good job!

My mother was a waitress in 1945 and she told me this same survival story of the men that sat at her counter and order the hot tea pot with the bag on the side.

I was doing that in 1979 myself . I was working but only at 6.00hr welding. Room and board 25.00 a week at the ymca in Renova PA. I'm still verticle and retired now. Rough times back then too.

Ya know I thank you so much for saying that about they “might not be that healthy” but it’s putting food on the table. In my own experience if I had 5 bucks to feed my family and a loaf of bread and package of processed cheese would make a whole lot of grilled cheeses, and 99 cent hot dog although not great for you. Our bellies will be full. And that’s always what’s most important.. thanks hon!❤️

I agree...my family will not go hungry and I’m ok with more than a few unbalanced meals if it’s what I have to do to have no hungry bellies. All the people who drive through and eat junk food 3 times a day aren’t eating as balanced a meal as you did here! Great job! I think of times when money was tough to come by to meet all our families needs...mom would get creative with the food...and we always thought it was special! New subscriber and very impressed!

Please be aware many vegetable items can be regrown in water. Like flowers in a vase, it's important to keep the water fresh. Carrot tops taste like mild carrot flavour. Great salad green, rich in vitamins. Cut the top off a carrot, keep it in a shallow amount of fresh water on a windowsill. Beetroot tops are the same. You may notice them starting to grow roots, that's great. You can keep in water or try regrowing in soil. Spring onions will grow in the same way. Herbs can be kept fresh and sometimes roots will grow... To encourage that, cut off the dry bottom of the stalk. Fresh herbs on clearance are something to watch out for. Fresh herbs and mushrooms can also be dried in the oven to help preserve them for later use. Fancy breads on clearance can be cut and dried in the oven to preserve them. Useful for croutons or to soak in clearance milk or cream and make 'bread and butter pudding' add condiments... A beaten egg or the juice from a can of chickpeas can be used to make an egg substitute. (loads of information on how online).

@@frugalmum7943Thanks for the "Juice from a can of chickpeas" tip! Did not know! I also pour the juice from canned veggies into a jar in the fridge, along with grease drippings. This becomes soup stock-- toss in a cut up carrot, potato, & handful of rice or pasta, simmer. I can feed 3 or 4 for $1. I like all your tips. I too am in the habit of rooting the ends off vegetables in water by a window & then I plant them in pots. Collards, mustard & turnip greens do not need to be pulled, you can cut off the edible leaves & the roots will regrow thru the season. Also: food stamps can be used to purchase vegetable plants & seeds.

I never realized when I was growing up..how my Mom always managed to have filling meals on the table. This reminded me. The day after we had spaghetti for supper ..the next day, she would reheat the spaghetti noodles and just add one or two eggs (depending what we had). It was pretty much just stir fried til the eggs were cooked through and seasoned with salt and pepper. I loved it so much that I made it for my kids and we called it Chinese egg noodles which made it special. This week our grocery store has pasta for 50 cents a pound so I’ll be getting some to have on hand. Thank you for sharing!

Add in oats(1 banana, 1 egg, 1/4 cup oatmeal flour) and tiny bit of baking powder and spices if you have them and they puff up more.

I have a few money-saving tips I’ve learned from experience over the years. One is to freeze gravy in serving-size quantities. It tastes exactly the same as when first made. I bought a screen with handle at dollar tree for $1. It’s designed to keep grease from splattering. I chop the green parts of the green onions I grow in my flower bed and put them on a table in the sun with the screen on top. They dry in 2-3 days, then I store them in a glass jar to use in cooking. If milk is close to going sour, I freeze it in one-cup amounts to use in cooking. When thawed, heating it brings it back to the same consistency as fresh. I freeze bacon grease for seasoning. I put it in a snack-size bag and form it into a long stick shape. After freezing, I can easily break off a piece the size I need.

I do the same in my windows. Also dandelion petals , orange day lilies flowers chopped and sprinkled over banana pancakes is delightful and I pick mint leaves around my complex when I walk for a cool glass of tea. Also look for young wild onions and chives!

Teresa you can make this easy dish in a baking dish put 250 grams of cooked pasta of your choice I use penne or rigatoni open a tin of tuna in oil or salmon spread over pasta sprinkle over peas and corn pour over a jar of cheese sauce or cream of mushroom soup put grated cheese on top 180 oven 30 mins enjoy 🦋🐳🧸

An easy dessert one can of crushed pineapple and juice in a bowl mix in vanilla instant pudding powder and one tub of sour cream or one tub of cottage cheese mix and place in fridge one hour serve with whipped cream and coconut or strawberries

I really enjoyed your video. My parents had 10 kids 8 boys and 2 girls, in a 13 year period. My mom could put a meal together from what looked like nothing. You so remind me of her. We all survived. Money was tight. My dad was a factory worker. Thanks again!

growing up poor my mom made pancakes for dinner for often. They're so fulfilling you can eat 2, with maybe some eggs & toast and you'd be full for the whole night!

For us it was ramen noodles a lot of times, but thankfully I absolutely loved the stuff. It was the hot dish casserole a neighbor had given my mother the recipe for that I absolutely detested. I wouldn't have minded having that cream of mushroom soup in a bowl on the side, or even just in a tea cup, but mixing it with ground beef, corn, lime beans, and onions with tater tots on top was what just completely ruined it! I understood mom was struggling for money too, I just wish that we could have had those ingredients in more pieces instead of a casserole. I loved her creamed tuna fish with mashed potatoes, though, and the Rice-A-Roni Spanish rice mixed with the hamburger meat and cheese melted on top. I make that sometimes, to this day.

I remember feeding my kids lots of bean and rice and fideo home made tortillas. For super cheap. I'm from NM we have lots of wild onions out here and spinach. Asparagus grows along the rio grand. We eat lots of red or green chilie roasted and every day we make our tortillas. I like your videos your very likable and sweet. Fideo recipe sauté fideo till lightly brown add onion cook till clear garlic at the end add bullion cube or broth and tomatoes if you have them and tomatoes sauce the little can and boil till done. Every kid got a big bowl with a tortilla and cheese if we had it.

I really appreciate the way you demonstrate making food that IS more balanced than I would've expected from the simplest, modest ingredients. People who've never had to cut back have no idea what it can be like. I think of it as being like having a spare tire in the trunk. You wouldn't want to drive around on it all the time, but if you get a flat or a blowout, it makes all the difference in the world.

Just an FYI, you can microwave a firm banana in 15 second increments to soften and bring out the sweetness.

OMG! I had some leftover Turkey mushroom Alfredo. The sauce had been absorbed by the turkey and pasta. So, I decided to use the idea of frying the Alfredo like you did the pasta pancakes. I used bacon grease in my cast iron. Dropped small piles of Alfredo into the hot pan. Made crispy Alfredo pancakes. YUMMY!

My mom grew up poor too. She said they toasted flour added water to make a type of gravy, added salt. Also, they made tortillas with just water and salt and had that for a meal. Meat was a treat for them.

Nobody needs meat in reality. Its protein but red meat especially is hard to digest and hard on the kidneys. When people suffer from kidney failure or disease the 1st thing the doctor tells you is to omit meat especially red meat. Fish is ok and eggs . Peoole were healthier when times were tough the 1930s and 1940s because they ate only to fuel their body. Nobody overconsumed food. Everyone worked hard . Especially the mamas . Dads in factory work or farm work manual labor . Kids too. You left school to help family survive.

I know your family loves your cooking. These recipes look so yummy. My mom cooked similar to this for 7 kids. We never went hungry and she sacrificed a lot for us. I cried when I saw you cooking pasta and eggs together. I never would have thought about that. I was cooking, and wandered away from the computer while you were putting it together. It looked like a potato pancake in the pan. When I realized that it wasn't, I cried. My mother was born a few months before the stock market crash, and she grew up dirt poor. We were grass poor, growing up. One level up. Then, through a lot of sacrifice and fried baloney, grilled cheese, and canned soup, and both my parents working while my grandparents took care of us, life got way better. I am so sad for kids today, including you. I lived through the fat years. I made $1.60/hour, and could live on it, although not high on the hog, for sure. When I was making $3/hr, I thought I was rich. When I got to $7.50/hr, back in 1979, I was rich. I worked 80 hours a week, and made nearly $30k/year. 1979. 42 years ago. Minimum wage can't let people live any more. As Chris Rock said, minimum wage means that, we'd pay you less, if it wasn't against the law. When I realize that folks are living on less than that now, I have to shake my head. My parents' house cost $15k, my house cost $55k. And we were fine. This country is in such a decline, I'm grateful I'm old and closer to the grave than you. I live on $8k/year now, and am moving to Mexico after my mother dies. She's almost 92, and probably has another 5 years to go. I just don't know how most people can cope anymore. Try potato pancakes. Onions, potatoes, salt, eggs, and fat. Cheap food. Filling food. My grandmother had 7 kids to feed during the Depression. None of them died before they were 80.

Good morning, SS. Just for your viewer reference, that type of pasta is called Fideo and is usually found in the Mexican food/ethnic aisles.

It looks the same as the Lipton soup packets have. If you bought that, you would have the added benefit of cooking in the seasoned broth for a bit more money.

In my local store the Fideo is 33cents a bag! Goes a long way. The company also makes tiny little shells, which are another option, and even alphabet pasta for the kids to add to soup..(also good for craft projects for the little ones).

Hello, FYI, most Salvation Army Food Banks have 3 days a week where you can go and get 4 items each time. They do not require signing up, just walk in and pick out your 4 items some time they have large Salads, Eggs, Milk, Yogurt, Breads, Pies, Canned Goods on occasion, Rolls, Sweet Rolls Onions, Potatoes, Fruits and sometimes Meats. Some items are on occasion. But I have picked up a Large Chef Salad, Fruit, Bread and or Tortillas (Breads you can get 2) and Eggs. Then the next time get 3 different, if possible. Our Sprouts, Safeway and other stores Donate. It sure helps. Call you local Salvation Army and ask when the location and hours and days are for the Daily for Bank is. Not all areas have this. Just food for thought.

I can’t wait for summer and getting fresh vegetables and berries from my garden. Green peas, lettuce and tomatoes grow like crazy as well as blackberries and raspberries. Having a garden has been one of the best things we’ve ever done to eat healthier.

I get food stamps for a "single house hold" and only buy stuff for the month off of 154....I didnt spend my money wisely and forgot to plan for the rest of the month before my card gets loaded (I live alone and have student loans to get paid off soon so im great full for the food stamps)..however my card gets loaded on the 19th of every month and it is now the 5th....I prepared some and bought a 30 count of medium eggs (2.45) and powdered milk to mix in with my gallon milk (1.29 where I went but target was cheaper and I have a 10 dollar gift card so I'll use that for groceries and some miscellaneous meal idwas)....so basically for the rest of the month I'm eating off my left overs within reason but only have 1.62 on my card....I forgot that bulk buys can be relatively cheap with the get small method..its just hard to figure it out and im glad you made this post

I've been there, a lot of rice beans veggies and it's good for you. Oats for breakfast. Even rice for breakfast. You can put zucchini and other veggies in spaghetti. I always start with the Dollar Tree unless I can get pasta cheaper elsewhere. I usually buy the big 20 lb bag of flour it'll last me for months and I can make bread, biscuits, tortillas, noodles, all kinds of things if you know how to cook. Cornbread. Tonight we had veggies and rice so nutritious. It was tasty without any sauce.

If there's a church or food pantry nearby, get as many staples from them as possible first and use your food stamps to get the rest and build your meals around the food pantry items. The food pantry usually gives you items like: rice, noodles, canned fruits veggies, peanut butter, jelly, soups, tomato sauces , canned tuna ,cereal and bread. Then you can use food stamps to get eggs, milk, cooking oil, some condiments or other items to create meals. I hope this helps. It is a challenge to make meals on an extreme budget- Don't lose hope.

You can always poor the "pasta pancake" mixture into a loaf pan and bake it in the oven to make a pasta loaf.Then if you have tomato sauce or tinned tomatoes you can just heat that up and poor it over top. It's really yummy.

My Italian family referred to your spaghetti pancakes as spaghetti pie. Same ingredients as yours with maybe an additional egg or two and a little flour. We use a round pan and pour everything in the pan. Once it’s set we put a plate on top of the pan and flip. We put the pie back in the pan and cook until done. Cut in wedges.

1/4 cup unsweetened applesause can be swapped out for one egg. In pancakes, cookies, muffins. Also, cook Karo syrup & brown sugar to make faux maple syrup.

My top tip is attempt to grow herbs! I have Chinese garlic chives, oregano and rosemary so far, but I use them all the time and by growing them myself I have essentially free flavor. The chives were a gift out of my grandmother's garden and you can actually harvest mature chives monthly, cut them into small pieces and freeze them. It makes it super simple to grab them and throw them in everything. We live on a pretty low budget and I completely agree with search out resources. Our local schools were giving out food for every child for covid relief last year and that helped me so much. Yeah, most of it is really processed but weeks I couldn't afford meat I really appreciated the chicken patties and hamburger patties to add in. Also the milk! My kids were drinking so much milk because of the schools. Normally I give them water and one glass of milk a day but they were getting 2+ a day. I don't know if they will continue the program but when I really needed help I was very glad to get help

Kids need the milk and if your kids are thin they need whole milk. Milk should be the 1st item on your grocery list. It is needed for cooking and the kids need it 100 percent. So please get more milk in your budget. Keep powder milk in the house . Also cheese in meals . My kids love the walmart mac and cheese 50 cents a box. I add a hotd og or 2 chopped up and a can of buttered peas 50 cents. Fills them up oatmeal with raisons in the morning. Add milk

I watch a lot of Asian cooking videos and had noticed that in almost every dish they will add eggs either soft boiled or over easy fried eggs to noodles or soups...so I started trying it bcse it's a cheap way to get your protein in a meal...I was impressed that you added them to all 3 meals😁 I was going to mention Barilla brand angel hair noodles has added protein in them. About 10 grams of protein to 2oz serving. They cost a tad more but if you are out of meat or eggs it would still fill your belly😋 I really enjoyed your suggestions and recipes too!

I get my check each month so I do a monthly haul because I have no car and have to use taxi's which is insanely expensive right now though I am using walmart instacart and delivery to my home... with what's going on in the world right now... this is really helping me watching your videos I am copying all your recipe's lolll

If you add just a little bit of water to your eggs or pancakes oh, the water will expand the eggs and make them fluffy.

I always ask for extra condiments for this reason.The extra foodshare for the pandemic has been very helpful and honestly have never ate better, but when it's back to living on a limited disability income without the extra help...it's videos and PEOPLE like you that will keep me and my tummy happy!!

I am starting the year by making meals with what is in my fridge and cabinets-then when I have an empty freezer/fridge I plan to shop for the day only-I have enough soups and pastas for emergency situations to last a while but just don’t want to stockpile anymore in 2021-i think it makes food unappealing-I love this video because it makes simple foods special ❤️

Hi, I started this on November 15th after watching some of these videos. I live alone so I'm sure that made it easier. I went shopping for the first time yesterday for a hand full of necessities like eggs and flour and of course Comete seasoning - I still have a full freezer. You can definitely do this! Just don't be hard on yourself if you have to pick up something small like milk or eggs. Its changed the way I think that's for sure.

I've heard of families who shop as little as possible in the weeks before Thanksgiving using up the items in their pantry. It has never worked for me during November but I go through my boxed stuff every few months. I will give away any food that we won't use for some reason before it expires. Something that has worked out well for me with a small household to use up pantry food is making small "meal prep" meals from a large pantry meal like spaghetti or tuna noodle casserole. Putting them in small containers to pop in the microwave seems to be the magic as far as them being eaten. I tire easily but doing one of these early on a Sunday is manageable. It also avoids fast food when there is something cooked already prepared.

Frozen veggies last longer and you can often get a bag of broccoli for 98 cents walmart. Can fruit and veggies are better than no fruit and veggies usually 50 cents a can walmart brand. I put can peach in jello. I love can pear with cinamon sprinlkled on please try it. Can fruit really good with cottage cheese. I fry can sweet peas with a half onion delicious they carmalize. Can of pork and beans with ground beef delicious and cheap when you are broke. Really fills you up. I try to eat oatmeal for breakfast it helps keep me full. Eggs are a cheap protein . I look for egg recipes. I like egg burritos or egg bakes

I blew our budget out of the water for the last few months of 2020, between moving and holidays it just got a little out of hand. But now we're going to get back on track. I'm working to reduce our budget from $700 to $500. We've lost a couple pets and had a couple of kids move out, so I'm sure we can make it work. But that will include all our groceries, supplements, hygiene and paper products. We don't waste much food at all so I'm grateful for that, but I've had to do some major tweaking to how I cook since I've lost two grown people that use to live here🤣😂

Thank you so much for your contribution to us in need.. you are an angel..😇 When you're running out of things, And I usually do, I love my eggs ... but actually when I'm running low on eggs and I am one that is lactose intolerant.. I add water to my eggs and it comes out fine just don't add too much water. Actually the church Pantry provides non-dairy dry milk and I love to stock up on my non-dairy dry milk when I go to church every Sunday. Not too many people enjoy the non- Dairy dry milk.... But it goes a long way. eggs.

I go to fast food restaurants and buy the cheapest thing on the menu to go. I fill the bag with condiments to the top, get a handful of utensils and napkins. It saves me alot.

My parents grew up during the Great Depression. No wasting food. Washed and reused tin foil. "If you're hungry, you'll eat what's put in front of you".

I’ve been getting extra condiments at restaurants since the 70’s when I became a single mother of two boys. I could make sauce for sloppy joes, salad dressings and other special seasonings. I made hot dog spaghetti-spaghetti with some oil or butter, powdered Parmesan cheese, dried parsley and S & P-macaroni and cheese with a can of pork and beans “doctored up” with S & P, ketchup, mustard, minced onions and brown sugar (before Bush’s beans!) and cook cut-up hot dogs in the beans. Tuna, noodles, cheese and peas in a pot was a favorite. I didn’t bother to bake it usually, but we still called it a casserole. My sons laugh about my frugality, but they now understand. We wouldn’t have survived without pasta!

As I have no children or any family at all it has been very difficult. But I truly appreciate how you are helping those of us who have had increased difficulties during the past year. I have been taking the end of my celery about 2inches and putting it in water so that it regrows my celery put this in a bright kitchen window or someplace where It can get the sun ,you can do this with green onions just cut the green part off and stick it in water change the water every couple of days , you can do this with the tops of carrots leave 1 inch of the top, just stick a small part of the carrot into water, you can do this with the end of Romain lettuce just cut off your leaves probably 2 inches from the bottom stick it into water and it will regrow your lettuce. Also you can make homemade syrup out of a box of Jell-O you can do it with regular Jell-O or the sugar free.. I hope this helps someone it certainly helps my grocery budget!

1 large box of jello any flavor 1 cup of sugar 2 Tablespoons of corn starch, mix all together put in 2 cups water bring to boil turn down flame keep stirring till it turn to a clear color , this will take a little time when clear it’s ready to put on pancakes or French toast waffles. I have also use it on a cake just punch holes in cake pour over punt in refrigerator for 30 to 40 minutes.
