Great to see you back on the Tube, Dr Maggs. Avocados 🥑 can safely be stored immersed in water inside a bowl in the fridge. The water stops oxidisation and prevents browning and softening.

I refrigerate my avocados and that halts the ripening process. Just be sure to take them out of the fridge a day or so before you want to eat them.

@@fern1416 so they ripen. I do the opposite of this and it works really well. I leave mine out until they just begin to get soft and then put them in the fridge. The fridge doesn't stop them from ripening, it only slows it down. The way I store them, they usually get to a perfect ripeness just when I need them and last quite a while. I rarely have them go bad anymore

I did exactly this. Now my problem is that the second half goes brown very quickly in the fridge. I wrapped it in corn starch bag and that did nothing for it. Next time I wrapped it in a paper bag abd that was a bit better

@@fern1416 save the half with seed and sprinkle with real salt, wrap tight with plastic wrap. will last a day...if you go two or three you can slice of brown edge like you would a little mold off a block of cheese...sharp knife required...works great!

Thanks, I will do that if I decide to get them again. They're not that nice and I don't really want to be buying plastic or cling film just for that. I've lived my life without them so am sure ai can do keto without them too but I will remember all this advice if I do famcy one. Thanks again

@@DrDanMaggs Previous to your return I had subscribed and hit the alarm button. You had a lot of great information when I first started my Keto transformation. Lost 60+ lbs since starting thanks to you and others. I'm 63 and had been overweight for decades. Covid encouraged me to lose weight. Started by getting rid of anything that had High Fructose Corn Syrup in me fridge and pantry as well as Pasta, Bread, Rice, and lost 20 lbs in a couple of months. I discovered Keto and Time Restricted eating a couple of months later and lost another 40 lbs to where I am now at 157 lbs. Target is at 150 lbs.

The solution to the avocado ripening issue: is to let them ripen on the counter until just before edible, only slightly soft. Then wrap them up in a few layers of plastic wrap and refrigerate. They will still ripen but very slowly in the frig. Good for 1 to 2 weeks, maybe longer.

I have 6 avocado trees in my backyard, right now they're in bloom, even though some still have fruit. They weigh around 450-500 g each. I eat avocado daily, usually just chop it in cubes, mix with extra virgin olive oil, and raw eggs from my chickens, some Himalayan salt and maybe paprika or Argentine chimichurri sauce. I only fry or cook with either lard, tallow, coconut oil or ghee. Olive oil I use a lot, but only after I turned off the fire. Sometimes if I cook Chinese food, as I don't use soy sauce, I use Coconut Aminos, which in my opinion is far more delicious and healthy than soy sauce.

so great to hear from you. i've lost 45 lbs so far this year. i am type 2 diabetic with many food allergies. and i'm 60. so i dont want to much loose skin from losing to quickly. have gotten my A1C from 6.9 to 5.6. i go for blood test friday. so i pray its even lower. GOOD NEWS, DOWN TO 5.4.

To avoid wasting avocados due to over ripeness, pick a few bright green (fairly firm) avocados and a few brownish (not so firm) avocados. Refrigerate the brownish fruits and use them first. By that time the firm fruits will be ready for the fridge. They will ripen faster in warm conditions, but as soon as they soften, place them in the fridge. I hope this is helpful.

Avocados: leave them out till they start to soften, then transfer to the fridge. Store unused part(s) in small baggies.

I buy packages of frozen, chopped avocados. In my country fresh avocados are very expensive, but these packages give you more avocado for your money. So I take out the amount I need about 10 minutes beforehand, and put the package back into the freezer. They stay fresh "for ever", though I usually finish them within less than two weeks. (Low carb since 11 years.)

Hi Doc. Thank you for the informative vijeo. Concerning avocados....buy the Haas, unripened. Stick them in the fridge. A few days before you need them, leave them out at room temp, or put them (it) into a paper bag. They won't ripen in the fridge, and will stay for about 3 weeks. The paper bag will allow the natural ethylene to ripen the fruit. Happy trails.

Hi Dr Maggs, for avocado, it isn’t how you store them, it is more the variety where they are grown. A Mexican grown Hass avocado will stay soft green for a lot longer than an indifferent variety grown in north africa. Better shelf life is usually reflected in the price.

Hurray! You are back. I discovered your channel during the pandemic and stuck around hoping you would show up again. I am one of those people that have Pre diabetes and I realised I needed to make a change due to the risks from COVID and discovered low carb. It is the single most impactful thing I have done since getting this diagnosis in 2018!

To freeze ripe avocado (not over-ripe), peal, slice, freeze flat ten put in freezer bag. Here, in Canada, you can find frozen avocado slices/chunks in the frozen fruit section of grocery store .

I am not necessarily interested in a strict KETOGENIC diet, but my doctor has told me that I'm insulin resistant because I use to be severely obese (I've lost 205 lbs. in just over 2 years), so increasing fat and protein seems to be a smart option, especially since I started weight training. I've been very interested in research of higher fat diets, with things like butter, bacon, or yogurt, or eating more eggs for breakfast. Mostly because I don't like just trusting anything I'm told. So the idea that women may not be restricted to 6 eggs in a week is really quite fascinating. Thank you so much for all your help, I really do appreciate it.

I agree with eating healthy fats, but after losing over 100 lbs on keto I found that fats will stall you if you eat over 30 g a day. This is after you have become fat adapted. I then found that going leaner on my meat and cutting out a lot of butter and other fats, lowing our carbs to 20 g a day works wonders. Love the video though because it's full of great information.

Thanks so much for this video! The French sauces a very helpful tip since I miss gravy and need to learn adding healthy fats. Baba Ganoush makes me want to experiment with aubergine. This is my 3rd attempt at keto. I have gained so much information that will help me succeed in between the failures. I never struggled too much with my weight until now. I simply starved myself and I was a carbaholic. There is a mental block with consuming fat on purpose because of the food pyramid. Luckily, my mother worked for the health department as a nutrition educator when I was growing up, so I do have an awareness of nutritional density. My sweet tooth has often been my downfall, so I appreciate the chia pudding mention. I did not know chia seeds could be laxative. Avocados can be frozen well, so if you process them all when they're perfectly ripe, meaning cut them up and freeze in chunks, you can easily use them in smoothies. I particularly love chocolate protein powder smoothies made with frozen avocado because of the creaminess they impart. It fools the brain and kills the craving and then I have to keep reminding myself it was a GOOD thing to have that chocolate shake! 😅

The smoke point of virgin coconut oil is - best for baking and sautéing. The smoke point of refined coconut oil is 400°F, which makes it a better option for frying or cooking at higher temperatures

Great tutorial on how to eat more healthy fat in a 'normal' natural way. I started out on the Low Carb journey more or less the same time as you. In my case, as an alternative to poly-pharmacy to treat T2d. The whole bulletproof coffee thing never really appealed to me, nor did the notion of choking down 'fat bombs'. However, I quickly noticed that reading labels, and learning to make your own is definitely the way to go. Especially, during the pandemic, the old, 'I'm too busy' chestnut doesn't wash, and making your own mayonnaise, for example, is really easy with a stick blender. Just visit the University of KZbin, and you'll find a plethora of tutorials on that and all the other good stuff you mention. Thanks for sharing.😋

Hi Dr Maggs So glad I found you! I thought that seeds, nuts and dairy like yogurts and milk were a big No! No! I'm French and I have always made my own vinaigrette (but 2 part oil to 1 part vinegar and whatever herbs you want to add if any.) and mayonnaise with 1 egg yolk, 1 tabespoon of mustard mixed together and oil drizzled in the egg yolk/mustard mixture until you have the mayonnaise consistency) sometimes I would wisk the egg white into a mousse and add it to the mayonnaise. This would make the mayonnaise colour lighter and the texture more like a mousse hence the name mousseline and not mayonnaise. And no, you are not offending me with your take on the French sauces😊

We buy a huge bag of avocados at Costco. They are rockhard when we purchase them, we leave them sitting out on the countertop until they start to soften. Then put them immediately into the refrigerator and they will stop ripening and last for at least a week!

One trick we used to keep guacamole when it was made: since the recipe itself had lime juice in it, we'd take about half of the amount and once the guac was settled in the container, put the rest of the lime juice on top and seal the juice against it with loose wrap. Kept it for days, and when it was time to pull it, pull the wrap off, mix the rest of the line juice and eh. Good to go.

Purchasing avocado - my advice. Buy them green and hard, preferably cold as those are the newest arrivals. Take them home and either store them out of the fridge with apples or onions until ripe. The reason - people love to squeeze avocados. This bruises them and the bruises will be the first to turn black even before the rest ripens. Don't go pinching them yourself. Just leave them. If you don't pinch them they will keep a little while a week or a little longer, and be perfectly ripe when you need them. I have also discovered if you buy a round avocado, it will have a big round seed in the middle. The ones with a skinny neck have small seeds and more flesh. Buy 3-4 at a time, a couple times a week to keep you in perfectly ripe avocado.

I have been on Keto since 10/1/2021. Already down one pant size I think. I find myself making up crazy recipes to stay Keto compliant mostly. I liked this presentation. Gave me some new ideas. I have been using lots of heavy whipping cream, half n half, almond milk etc. I use hemp, chia and flax seeds in my smoothies along with organic almond butter, almond milk, whey protein isolate, walnuts and organic frozen blueberries, cherries and pineapple. I realize the fruit is a no no but I still am using it for now. Getting tired of eggs already. 🥚

Hi Dan, welcome back to YT, carb dodging has had a great positive influence on my health. Lots of good ideas in this video, and lots of excellent photography of appetizing foods. We're eating more avocado as an accompaniment to many dishes. Last night it was cubed up atop some chilli, -- really good. We've made baba ghanoush and tapenade, but not as often, love them both. We're just getting past the summer heat here and I often add a couple olives to a meal thinking about salt content (wanting more salt) but also the fat content is a plus. Thanks again!

The problem with most videos of this kind is that it is not such good advice for those of us who have more than 50kg to lose. When I started keto I ate way too much fat and it slowed my weight loss. I have yet to find a video from any of the keto doctors expalining what level of fat intake people with my weight should have, if any. I started keto almost 2 years ago and lost 15kg up to now. I still think I incorporate too much fat in my diet. A few months ago I went from cream in my coffee to whole milk and lost 2 kg in a month. It is a guessing game.

Had the same problem with Avocado's but only yesterday i learned a great method for ripening them to order. Simply put an Avocado in a brown paper bag with a Banana between 6 hours and overnight and your previously rock hard pear will be soft enough to eat. It really works!

Try putting your avocados in the fridge it slows the ripening process and take them out of the fridge and keep your eye on the to make sure they don’t over ripen.

Hey Doctor, good to have you back. i love your videos. You havent mentioned pork and specially bacon. if it's not sweeted, very good way to consume fat.

I have the same issue with avocado - usually I take the flesh out, whir them in the food processor with some lemon juice and freeze them in the little silicone molds (sort of like you showed with the butter) and keep them in the freezer. Then I add a chunk to things I am making like no-bake cheesecake (because I don't do smoothies, but I'm sure that would work as well). Perhaps they could even be added to mayo or some other sauce that avocado might go well. I am going to have to get at making some of that flavoured butter and other items you mentioned. I've been rather lax about such things.

Pure lime juice keeps avocado from turning brown if trying to save in the fridge after peeling and taking the seed out...it will last 4x longer with my experience

Once the avocados start giving when you push on them, put them in the fridge to slow down the rotting process. I do this all the time.
