Can I do this to extend my fiber by using ethernet cable? So by doing fiber to ethernet and then ethernet to fiber?

You typically get 100ft out of ethernet while fiber you get alot longer range, going to fiber is one reason to extend range if a p2p wireless data solution won't work.

@matres24 well no matter how you do it so long as the media converters are powered and your ethernet is less than 100ft per run aka 100 then a rj45 -> spf then spf to -> 100ft of more ethernet. If everything is connected correctly it will work
