. Question : Why no release valve or any way to let the bubbles come out ? Does the Basil over dominates the flavor of the broccoli 🥦 ?

I usually do not use a release valve because once the fermentation process begins, the bubbles/gases find a way to release itself as the jar is not really airtight. All I do is place the jar on a tray to catch the liquid. The basil actually complements the broccoli flavour, makes it taste better.

I've seen other videos where they opened the jar once in awhile to let the bubbles out.

I noticed the broccoli was not totally submerged at the end. I will try this with a glass fermenting weight to insure that the veggies stay submerged. Thank you !

Thank you for sharing this recipe with us, I have a few questions, does the finished fermented jar stay out on the side in your kitchen? Or in a dark place? Does it need to be cool or warm during the fermentation process? Much appreciated.

I usually leave the finished fermented jar on the kitchen counter unopened, once opened I transfer it to the refrigerator. If you live in a warm climate the fermentation process could be from 7-14 days but if you live in a cold climate it will take longer. During the colder months I keep my fermentation jars in the warmest part of the house so that the fermentation process can be completed quickly.

They were crunchy (still solid)

@@ZizziGreen I did it a couple of weeks ago. Yesterday I opened the jar and it tasted soooo good. This is my first time fermenting broccoli and it turned out perfect. Yes it is still crunchy but softer than the raw broccoli. I think the texture depends on how long is the fermentation.

whan you opened the jar the broccoli was above the brine level. Why wasn't it spoiled?

In the beginning, the vegetables were fully submerged in the brine but when the fermentation process began some of the brine bubbled over which caused the broccolli to be slightly above the water. The brococoli didnt go bad as it had already undergone the fermentation (preservation) process and hadn't been opened, so it was able to maintain its freshness. If the brine level was low and the jar was exposed to air without refrigeration it would most likely get spoiled.

@@ZizziGreen so that would mean that you need an airtight container? In videos for fermented cabbage you are suppose to let the air out or have a lid that is not too tight….now I’m confused lol. If no air gets in your broccoli won’t the container explode when fermenting gas arises? Thanks ❤🙏🏼

@@debbiehowell9464 Yes, the lid was tight. During fermentation gases are created which causes the pressure within the jar to rise which in turn leads to the liquid bubbling over and escaping through the jar. Also, this could happen when there isn't enough headspace or empty space in the jar. I hope you find this helpful :-)

At the beginning all veggies were submerged but when the fermentation process began, some of the liquid bubbles over which led to a slight reduction of the brine. But it still turned out great.

How long can it last without refrigeration?

It can last for more than 7 months without refrigeration as long as it’s unopened and stored in a cool fry place. I haven’t had the chance to keep my fermented vegetables for anything longer than that because I eat them very quickly. Although, some people have said they could last for more than a year
