I make pickled eggs in saved pepperoncini juice in a mason jar for 3-7 days in fridge. I add cracked red pepper flakes for spice. Yum!

Yes, there’s a difference between picked & fermented. Picking is soaking in an acid brine (like vinegar), whereas fermentation is a chemical reaction with the sugar in the food. That’s why its super important to make sure whatever you’re fermenting is always completely submerged in the liquid.

I bought some small check valves for aquariums. Drilled a hole in the plastic top and glued the check valve on, making sure air can release and not enter. Way cheaper than all those specialized stuff

Well, I have had red beet pickled eggs and mustard pickled eggs, but none fermented like this. I'll have to try a couple and see if I like them. I'm going to start to ferment a jar of red beets tomorrow and now I'm starting to wonder if I could use my fermented red beets and juice to make fermented eggs? Make them the same as the red beet pickled eggs, just keep out the vinegar and use the fermented juice in its place? What do you think?

I love Redmond mineral salt too, but realize that 90% of what they mine goes into road salt or industrial chemical making! Like dollars per TON. Thus the table salt they sell is crazy high.

I’m happy that you found success with the honey. I can’t eat sugar, my Crohn’s disease will kill me if I do. It hurts me so very bad and inflames my colon. This is why I only use maple syrup honey and coconut sugar. I wonder if coconut sugar would work?!! Hm!

Coconut sugar is not recommended because of its high mineral content, it can slow or even stop the fermentation process.

Hello Hiedi. I have fermented some eggs and while they are good to eat they, are starting to fall apart in the jar or, disintegrate which, I understand is caused by the water. Do you know of any way to prevent this from happening or, is it just that, I have fermented too many at once and/or, storing them for too long? any advice or, tips would be appreciated. The majority of the nutrition found in dates is in the pit. You can add 1 tbsp of date pits in powder form to a beverage like coffee to give you a nutritional boost. But as with all nutrients, consume everything in moderation. Dates have ALOT of potassium. There's a video on KZbin that explains how to properly turn date pits into powder form. Essentially you clean the date off and then let the dates dry in the sun (don't use an oven, microwave, dehydrator, etc---you'll lose the nutrients), lay them on a surface that won't cook them in the sun, once they lack any moisture grind them into a powder using a mortar and pestal. Fermenting is a form of pickling, the oldest form actually :) Though I may try making some with my homemade vinegar down the road just to see how they turn out. I currently have a couple of batches going that I will mention in another video that I think will be quite good :D

For most things, no, it is not necessary but I would never try to ferment eggs with out whey or the starter. The starter is to insure one gets a good ferment. Sometimes things can happen to prevent fermentation. I used to make kimchi for years with the traditional brine method, not starter whatsoever, and occasionally I had batches fail for whatever reason that I had to toss. It was so frustrating when that happened having to toss all that work and money. Since using the starter, I have never had a failed batch of anything

How long has it been? They can sometimes go for a month or more, it just depends on how much sugar was in there in the first place. You will know if you need to start over if it is no longer bubbly at all and smells like vinegar. If it is still making some bubbles, even if only a small amount, you may be able to revive it, I have managed to do that before. However, as easy as it is to get another going, you may just want to start over.

Just last night I happened to see my blueberry one still sitting out, must be 3 to 4 weeks and I think I fed it once during that time (no room in my fridge!) So I shook it up a bit and got bubbles galore, transferred it it a bigger jar, added water and sugar and it still sits out 😉 I am sure it will still be good for bread baking if it turns to vinegar!

I am sure the liquid would be good for giving to pets, I usually add a lot of red pepper to mine these days so not sure my dogs would like it. I usually just toss mine. Another thing I just thought of is it might be good to pour at the base of trees and shrubs. That is what I do with a lot of excess whey. I give some to the dogs and put the rest on my fruit trees

Unless you are just wanting to pickle the eggs, that is totally different though. A fermentation starter is super easy to make from whatever you have on hand. I think it would probably turn mushy if you do that. In one batch I tried poking holes in the eggs to get the seasonings I put in the liquid to get into the yoke but the yoke starts to seep out after a time so I am not sure what would happen with a poached. You could do a soft boiled egg and see how that works. Just do not poke holes in it

Fermenting is pickling, it is just he natural and old fashioned way of doing it and yes, it is more beneficial to you. If using the modern way to pickle, then I would suggest only using Bragg's ACV or homemade vinegar if your acidity is 5%. Do NOT use white vinegar as it is made from GMO corn. I hope this helps!

Rain Country I find this contradicting. As I've novicely gathered, pickling is where something is put in an acidic solution so bacteria doesn't (or is highly lessened) grow; a salt-water brine solution is a preservation method by which water is pulled out of the bacteria thus dehydrating and killing it; fermenting involves a process where sugars are converted to alcohol. I don't get the equality of fermenting and pickling unless definitions are being so generalized that they begin to lose they're useful meaning (and that is what the word "preservation" is meant for).

Heidi can one put spices into the fermentation eggs after they have completed the fermentation process. I've hadn't had much time enter acting with comments on your channel. You can but it is likely you will not get as much flavor into the egg whites doing it that way. The longer the spices sit in the liquid with the eggs, the more they will absorb into them.

Not all chickens lay every day. You might get a egg every other day from a chicken

Yeah, I have 5 chickens laying right now and typically get 3-4 eggs a day. I know for sure I have two that lay every day. So really, there are only two more that need to start laying

If your beet juice is not fermented already yeah it stinks 😂 I use beet juice with vinegar, salt and spices, or add brine from my fermented cuces / cabbage. Eggs need fair amount of salt, but you can add dill and get oh so yummy dilly eggs, fermented or in vinegar, both good first one healthier 😊

O man, dill sounds great too! I have so many ideas to try, I think I will have to do several jars with just 2 or 3 eggs in each to see what I like best! haha

Cee be if I have fresh I use fresh, it doesn't float to the top if you use larger sprigs as the dry stuff does. I also use fresh dill in some of my sauerkraut!

Onions smell foul when fermented, but they are really tasty. When I first smelled fermented food, I also gagged. But my stomach problems were miraculously cured with the first bite. Lifelong stomach problems cured instantly!!!

I'm a bit confused. In another video you said to not use sugar with the minerals because the minerals make it so the fermentation doesn't work. I know you were talking about sugar in that one... which I believe was about the fermentation starter... and you are talking about salt in this one... but aren't minerals... minerals? Educate me sister! 💜

Because the amount of salt you are using is MUCH less than the amount of sugar added to ferments like vinegar, wine, and more so the mineral amount is very insignificant and will not hurt the ferment

I leave them out 3-5 days on the counter to ferment. They are ready to eat at that point and I then store them in the fridge

I tried that once but did not like it, it makes the egg yolk mushy and it starts to seep out of the egg white
