You can place chopsticks on both sides of the filled when you're scoring. This will prevent you from slicing all the way through. Bleeding the fish at time of catch can be done by severing the chin strip between the two gills. Meat will be whiter when fileting. The mud vein can be pulled out like a thread. It's located in the middle of the red meat that runs down sides of fish.

Assuming you catch the fish on private property - in some states it illegal to publicly kill some types of fish, isn’t it? Check your local knows to be sure 🤷🏼‍♂️

Hey, thanks for uploading the video! Very detailed! On my last vacation to Sweden 🇸🇪 I purchased a reprint of a 17th century cookbook from some sort of Duke who was really into food. The fish, carp is given as an example, is cured in a brine of raw onions and vinegar. This totally gets rid of the "muddy" taste many people do not like about carp. It totally makes sense to me as an analytical chemist, acid does indeed break down geosmin, the muddy tasting molecule. If you are interested I can send you a scan of the recipe.

I'll have to try that. I grind the fillets in a food processor and make fish cakes, this gets rid of the y bones as well. Also carp are one of those fish that benefit greatly by bleeding well, i bleed all my fish

Another one I have heard as soon as you catch them put them into a slushie ice bath in a cooler (we call them eski's) so the blood goes back into the fish and it anthetise the fish straight away illmenting the muddie taste you sometimes cause that's from a histamine released in the blood.

There is a restaurant in Omaha Nebraska it's called Joe Tess restaurant and that's their specialty deep fried carp people load the place just waiting to get some mouth watering deep fried carp. I actually saw it on the television program about restaurants that have their own specialties. I don't know if it is still open or not.

Me and my dad went out fishing this last wednesdsy and caught a nice channel cat and a nice carp. We've eaten cats before but never carp. We are gonna try your method. But the interesting thing is that both the cat and carp had lots of eggs, and after some research we figured out that we could fry the eggs just like the fillets, and in the case of carp, their eggs didnt even have to be marinated cause they apparently have a more mild taste. We fried up both fishes eggs and while both were certainly very good, the carp eggs were especially delicious. There were SO many too, like 1/3 of the meat we got from that fish was just roe. Idk if you know anything about carp eggs, but their eggs are TINY, like grains of sand. After frying piece of the roe, they loafed up and turned into something like a fish hush puppy. I wouldve never have guessed what they were. You should try it one day

I would gladly try (and will) this fish. When TSHTF and nobody can get food at the stores and think that carp are "eww", I'll be eating nicely. God provides for those who believe.

Hey Phil! Thanks for the very nice tutorial. Instead of the "breading mix" I recommend trying flour + smoked sweet red paprika powder mixed together. That is a Christmas dish around here!

I had no idea. We were always told that they were too boney to eat We always took the carp we caught to the local Asian restaurant. We always heard they made fish stock and soup out of them. Thanks for a great informative video.

When you have caught the fish , whack it behind the head and put into an ice slurry straight away as this inhibits the histamine from tainting the fish flesh. Fillet , then skin and prepare as you would any fish , dust with seasoned flour and fry or make a batter and deep fry , inhibiting the histamine is key , that's how do it in OZ

Yo, Phil, happy Jesus weekend coming up and my son the fisherman says that trying to eat a carp is like eating a hair brush. He catches and releases. I never have carped but yours looks good. Hope all is well so stay in the river! Been watching a lot about crawfish but never crawed either. Too old to start. GBWYall and happy spring/summer!

yes, there are a lot of bones in a carp, scoring is a must in order to fry out the bones. Asian carp are even worse, but they are absolutely amazing. However, with all the catfish I catch, I wont be needing to eat carp. Took a couple days off work and went out all day yesterday.... did more cruising that fishing. Probably work in the garden today. Finally got my Mantis and filmed putting it together. Hopefully it will make a good video to help someone else out. Hope you and your family are doing well. GBWU2!

@@PhilCrockett I was wondering if you'd swapped out to carp but glad you haven't. You need a river break anyway. Toots is out planting and harvesting as usual. I'm only yard and maintenance and I mowed yesterday. Letting the front yard grow and reseed itself. And we're still goofy here in the hills. Yall have a Jesus weekend and GBWYall!

@@PhilCrockett Quick question: I've yet to catch my first carp, but I was curious what you mean when you say "Fry out" the bones. What exactly happens when you, as you say, "fry" them out? Do they dissolve or something?

@gojiack , yes, they pretty much dissolve in the smaller carp. However, the bigger carp like the one in this video, they add a slight crunch, but not an unpleasant bony crunch. Kind of a pretzel sort of crunch. Really, the smaller ones are better.

The gold/silver carp are evasive here and considered junk and not something to eat. Having said that, a few years ago i took a small one home 13inches or so.... It was all white meat and the only downside was the pin bone. Smaller ones seem to be really good eating if your river is clean. This is a great technique here...Im hungrier :)

Yes, if you don't score through those bones, it's not worth eating. However, I think it's some of the best tasting fish you can get if you prepare it properly. I even like it way better than trout

IT’s still lost on me how the bones get dealt with. Do they essentially liquify? Are they actually stiff cartridge? When frying do they get pushed out? The bones thing confuses me more now than it did before

Completely underutilized fish. Takes a little more effort to prepare but it's tasty and they are endlessly renewable. Anther option is to filet and run through a grinder twice, removes the bones. Make fish cakes. Delicious.

Try pairing it with sweet and sour sauce. The kind you see from Panda Express. Fried carp pairs well with sweet and sour sauce.

It’s actually a classic Chinese dish, called sweat and sour fish, which is a fried carp in sweet and sour sauce (sugar and Chinese vinegar).

@@PhilCrockett what do you mean "they cook out"? Do you mean that the whole cooked fish is so sufficiently crispy that you don't notice the crunchy bones? Or that the brining process dissolves the bones? Or that, somehow, frying in oil removes the bones? I've never heard this term or helps before?

Interesting that you left the belly fillet. I have seen people take ONLY the belly fillet, as it doesn't have bones, and simply toss the main fillet on account of the bones.

Even though you may fillet a carp, this species is not as suitable for filleting as a walley would be for example. The carp has the advantage that the scales are easy to take out(unlike the perch,walley & comp) You may be better off removing the scales and the belly content then fry it as it is. You just need to pay attention to the bones when you eat it.

There's more than one way to skin a carp. L O L. I like this method because I don't like to deal with bones. If you don't mind the bones, then stick with your method. Is Carp meat always that pink? Or is it just really bloody?????? I like to bleed my fish out, I hit them on the head and pull out their gills, just makes the meat taste better.

Also you can descale the fish,open it from the spine side,season it with sunflower oil,red paprika and salt with a hint of chilli and spread the fish against the open fire an cook it for an our and a half.The head can be removed or not,your choice.You can see how it looks over the fire in one of my videos.That way you get smoky flavour of the meat,like on the BBQ.

When I was a kid my grandmother would give us a slice of bread to eat with bony fish. You take a little piece of the bread after you swallow the chewed up bones, like herring and kipper bones, not big cod fish spines or anything like that.

@@Kerrsartisticgifts I’m fine with eating the bones but I get freakish thinking I can feel the bones in my throat. Probably because they scraped the side as they were going down. I’ve tried the bread trick for dog hair a few months back it did help a bit.

the bone comes out easy when cooked. Open fish out pull backbone out tail end first. be gentle.

Place cleaned carp on a cedar shingle. Coat with olive oil, spread some maple syrup and bake at 350 for 25 minutes. Throw away the carp and eat the shingle!
