Vanilla Cake:🍰
• 1 1/8 cups all-purpose flour
• 1 1/8 tsp baking powder
• 3/8 tsp salt (or a scant 1/2 tsp)
• 6 tbsp unsalted butter, room temperature
• 3/4 cup granulated sugar
• 1 1/2 large eggs (use 1 egg plus 1/2 of another; you can beat the egg and measure half)
• 3/4 tsp vanilla extract
• 1/2 cup buttermilk or whole milk, room temp
Lemon zest and juice of 1/2 a lemon, optional.
Mix the dry ingredients, minus the sugar. Then, cream the butter and sugar together. Add the eggs to the butter, sugar mixture. Then, take turns slowly adding the flour mixture and the milk. I recommend using a stand mixer. Be sure to add in the lemon juice and zest, optional. Bake in a greased 8x8 at 350 degrees Fahrenheit for about 25-30 minutes or until knife comes out clean.

Frosting Recipe:🤍
Ingredients:
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 tsp vanilla extract
2 tbsp milk or heavy cream
Juice from 1/2 a lemon
Instructions:
1. Beat the softened butter until creamy (about 2 minutes).
2. Gradually add the powdered sugar, 1/2 cup at a time, and mix on low speed until combined.
3. Add the vanilla extract and 1 tablespoon of milk or cream. Beat on medium-high speed until smooth and fluffy. If the frosting is too thick, add the remaining milk, 1 teaspoon at a time, until you reach your desired consistency.
