That first rig looks a lot like a Carolina Rig (maybe a poor man's version). Would you ever try to use something like that higher in the water column (for more of a swimming presentation?)?

I used to be the same way. I just wanted 7'6 heavy rods because I thought they could only handle giants lol I was wrong. I've been fishing the drop shot for over 10 years now and I've caught my second largest bass 9 1/2 pounds on 8lb test and a 7 2' medium rod. I LOVE the drop shot man. It catches everything from dinks to giants. I'll always have a couple tied on

I struggle slow fishing lures on the bottom (dragging and slow hoping). Mainly the struggle is with jigs and shakey heads. I collect more grass and muck more than bites. Any tips on this or should I be so concerned collecting grass and muck here and there? Thanks in advance.

Without knowing all the details (style of jighead, bottom composition and depth, etc.), I'd say the first thing to do would be to use a lighter weight. Also note that you will collect grass and "gunk" every now and then. It's common with bass fishing. Cleaning the lure off can be as easy as slapping it on the surface of the water by using your rod. Hope that helps!
