How to fix your wing pump gauge: Ignore it

Best thing would be to have some sort of pressure indicator within the wing. For example a small tube between strut and LE with some simple color indicator, spring. Would be more accurate. Something light that adds no additional weight. Or some more visuals to cross check that the frame is properly inflated. Your method is a start 😅

Hopefully the Ezzy sail company will get into making wings. They have markings, dots and guides on their sails to help tune them just right.

You do not have the leak issue with wing and kite that have the 'reactor' valve seen on inflatable SUPs. For other valves, I fixed the issue by making my hose and adaptor leak-proof by gluing them with thick epoxy glue. Since then, there have been no issues. However, this still does not solve the problem of the inaccurate gauge... but at least one of the issue is fixed...
