I never had issues with dark color bleeding after thawing out. About the second question, you can freeze the cookies once the icing is dry to the touch, the time to dry depends on your icing consistency and the ambient temperature and humidity.

I preferred using the press & seal, but cling wrap works as well!

I have not tried freezing cookies with fondant on top. I don't think it will work but if you do an experiment please let us know the results.

I also freeze airbrushed cookies with good results, you can do a test to make sure if works with the airbrush supplies you use.

If the cookie is crispy before freezing my experience is that it will still be crispy after thawing, with the method mentioned in my video.
