Nice. Space is at a premium for me, so we blanch the cobs, put them in ice water, cut off the kernels, put them in a freezer bag, with a bit of butter, suck the air out, with a straw, (as you mentioned), then freeze. Have excellent results, tastes fresh, especially the white and gold. Keep posting - None Of Us Is As Smart As All Of Us.

Thanks for this topic! Fresh corn is one of our favorite veggies, though I usually cut it off the cob and fry it like my grandmother did. Looking forward to finding the best way to preserve it this year. Hope you are doing well!

You could always cook them gently in a sous vide to save having to thaw

I prepared the corn for freezing last year (2021), when New Jersey sweet corn was in season. Later I defrosted the frozen corn, and prepared the corn by boiling. This corn kernels we’re “mushy”, tasted OK, just mushy. The same fresh corn prepared by boiling, had kernels crisp as the day it was picked. Did I miss something, was there a drying step I should have done before vacuum sealing and freezing? I’m looking forward to great crisp NJ sweet corn all year long. Thanks for you advice…

Have you ever pressure canned an ear of corn? Would it make the center edible?

I've never canned a whole ear. I'm not sure what the result of that would be, but my best guess is that the cob still wouldn't be very palatable.

If I just vacuum seal and put them in the frig without blanching or freezing, how much longer will they last? Is this even feasible?

In the fridge? Just the normal amount of time produce lasts in the fridge. A couple weeks, probably. Maybe a little longer if it's vacuum sealed, but not especially long.

I bought some corn on the cob on sale yesterday. The husk was a light green not dark green like yours. Does that make a difference?

Are these blanched or not ? I blanched mine and refrigerated, then vacuumed them, then froze.

I tried that last year. When I thawed them, they were just mush and totally uneatable.
