We love corn.my. Mother used to can the corn. My father grew the corn..us kids worked in the garden's . They are passed away... I sure miss the good old days. We also canned: tomatoes,potatoes,green beans, etc, and my Dad did this with a tiller on 4 acers on the bottom field and 2 acers on top field. We had 11 & 1/2 acres and 3 story house. I like how you are teaching the younger ones. I miss those days.thank you very much, and God bless your family .

If you like creamed corn, scrape the cobs after cutting the kernels off right into the kernels. Instead of using a brine, vacuum seal the bags and pop them in the freezer, it will give you a fresh picked flavor.

You can also freeze the corn left inside the shucks and when you get ready for it you can put in a microwave and cook it in the shucks you can even grill it in the shucks it taste fresh as it would when you first got it.

You can set the bag of corn in a pot of water to help push the air out when sealing.

I did talk about shelf life at the very end. With no liquid in the bag of corn, six months. It tends to freezer burn. If you put the brined mixture in, it can store one year. I have found bags in my freezer two years later (you know how things get lost in there!) and still had great taste and texture! Hope this helps.

I just take the outer husks and silk off..cut the ends off..freeze in gallon bags...take out, nuke for about 8 mins..cob slides right out of husk and any silk will go with it

I don’t think brine has to “cook”per se; heat helps dissolve the salt and sugar - just under boiling should be adequate.

Yes, just to dissolve the salt and sugar. You don't want it to hot that it is hard to handle. We dissolved the solids and then let it sit on the stove until we were ready to use.

I know that vacuum sealing a thawed steak with juices is difficult as the liquids is pulled towards the vacuum making it difficult if not impossible to seal. I semi-freeze my steaks before sealing. Can’t even imagine sealing a bag of liquid. 😯

It helps protect the corn from freezer burn. Plus, it makes a nice salty mixture to cook it in after you thaw and warm it in a pan or crockpot. Hope this helps.

Sorry, I didn't explain how we cook it after we defrost. I thaw it in the refrigerator then put in my pan. I heat it up and then drain the water. Then we love to add butter...lots of butter!
