That looks way too easy in reality it doesn't work that way I cant get this gasket on

Putting it on is usually easier than creating a seal. Sometimes packaging makes the gasket bent a little and doesn't allow proper seal. I recommend slowly heating up the gasket with a heat gun. Be careful not to melt the gasket, It happens faster than you think.

Just curious as I need to replace the gsskets on my fridge. Was your problem getting the gasket inserted into the groves it sets in or was the issue that the gsskets were too short and not fitting the lengths of the door height and width?

Hairdryer will make all the difference!!! Each spot you pop in needs to be heated!!!!

Update after spending $200 to get the new gasket and having a GE trained tech install it the gasket popped out and I had to hammer it back in barely. GE is a terrble product. The handles broke off a couple of years ago and now the gasket needed to be replaced and the GE tech struggled for over 2 hrs till he almost passed out trying to put it in. The repair shop laughed thinking it was going to be a simple job but then they found out what kind of mess it is.
